%20had%20a%203%201/2%20pound%20smoked%20ham%20%E2%80%93%20perfect%20for%20Steve%20and%20me%20%E2%80%93%20plus%20Buster%20and%20Orsini,%20of%20course.%20%20%3Cgrin%3E%3C/p%3E%3Cp%3EBottom%20line%20%E2%80%93%20DELICIOUS!!!!!%20%20And,%20beyond%20the%20lovely%20rich%20and%20balanced%20flavor,%20the%20texture%20of%20the%20fat%20was%20heavenly,%20NOTHING%20like%20the%20fat%20in%20your%20average%20supermarket%20ham.%20%20It%20had%20this%20silky/creamy%20texture%20%E2%80%93%20thicker%20than%20butter,%20%20but%20with%20an%20essence%20of%20%E2%80%9Cfluffy,%E2%80%9D%20if%20one%20can%20use%20the%20word%20essence%20to%20describe%20texture.%20%20I%20will%20be%20getting%20more%20hams%20from%20this%20farm.%20%20:)%3C/p%3E%3Cp%3EThe%20ham,%20as%20does%20all%20retail%20meat%20from%20Cascade%20Brook%20Farm,%20comes%20frozen,%20but%20my%20little%20ham%20defrosted%20in%20just%20and%20hour%20or%20two%20in%20a%20few%20changes%20of%20cold%20water.%20%20[Note:%20Expect%2025-30%20minutes%20per%20pound%20for%20bigger%20hams.]%3C/p%3E%3Cp%3EThe%20next%20step%20was%20to%20pick%20a%20glaze.%3C/p%3E%3Cp%3EI%20have%20had%20a%20lot%20of%20fun%20doing%20the%201950s%20thing%20with%20hams%20on%20Easter%20(I%20host%20the%20family%20for%20that%20holiday%20and%20July%204th)%20but,%20I%20wanted%20to%20try%20something%20different.%20%20After%20wandering%20around%20the%20Internet,%20I%20came%20across%20a%20recipe%20for%20a%20glaze%20that%20called%20for%20fresh%20thyme.%20%20Since%20I%20still%20had%20a%20fair%20amount%20of%20fresh%20thyme%20leftover%20from%20when%20I%20purchased%20it%20for%20a%20really%20amazing%20recipe%20for%20preparing%20steak,%20I%20figured%20this%20would%20be%20the%20one%20to%20try.%3C/p%3E%3Cp%3EHere%20is%20the%20recipe.%20%20If%20you%20go%20to%20the%20link,%20you%20will%20see%20that%20it%20has%20fairly%20complex%20directions.%20I%20originally%20found%20the%20recipe%20for%20the%20glaze%20on%20another%20site%20that%20recommended%20not%20covering%20the%20ham%20when%20cooking.%20%20I%20do%20not%20recommend%20cooking%20the%20ham%20uncovered.%20%20I%20ended%20up%20covering%20the%20ham%20part%20way%20through%20the%20cooking%20time.%20%20My%20ham%20ended%20up%20coming%20out%20great,%20but%20I%20recommend%20putting%20the%20ham%20on%20a%20rack,%20adding%20about%201/2%20to%201%20cup%20of%20liquid%20of%20your%20choice%20to%20the%20pan,%20and%20then%20starting%20off%20with%20the%20ham%20covered,%20basting%20a%20few%20times,%20until%20it%20gets%20close%20to%20the%20desired%20temperature%20recommend%20for%20the%20type%20of%20ham.%20Then,%20uncover%20the%20ham%20for%20the%20final%20baste%20and%20browning,%20%20unless%20you%20already%20have%20your%20own%20sure-fire%20way%20to%20cook%20a%20ham.%3C/p%3E%3Cp%3EThe%20glaze%20ingredients,%20with%20the%20ham%20in%20the%20background.%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ETake%20ham%20out%20of%20the%20fridge%20an%20hour%20or%20so%20before%20baking%20to%20get%20it%20closer%20to%20room%20temperature%20and%20score%20before%20basting.%3C/p%3E%3Cp%3EPreheat%20oven.%20[I%20baked%20my%20ham%20at%20325.%20I%E2%80%99ve%20seen%20anywhere%20from%20high%20200s%20to%20350%20recommended.%20Also,%20because%20my%20ham%20was%20smoked%20but%20not%20fully%20cooked,%20I%20needed%20to%20bring%20it%20to%20160%20degrees.]%3C/p%3E%3Cp%3EMelt%20butter%20with%20thyme%20and%20let%20stand%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EThyme%20infusing%20in%20warm%20butter.%20Doesn%E2%80%99t%20that%20look%20divine?%3C/p%3E%3Cp%3ENext,%20put%20the%20cider%20vinegar%20in%20another%20pan%20and,%20over%20high%20heat,%20reduce%20down%20to%201/4%20the%20original%20amount,%20%20and%20remove%20from%20heat.%20I%20recommend%20using%20a%20stainless%20steel%20pan%20for%20the%20vinegar%20reduction%20rather%20than%20Pyrex%20or%20Corning-ware%20so%20you%20have%20more%20immediate%20control%20over%20the%20temperature.%3C/p%3E%3Cp%3EWhisk%20the%20reduced%20vinegar%20into%20the%20butter%20and%20thyme.%20Add%20the%20honey,%20%20brown%20sugar,%20and%20%20Worcestershire%20sauce.%3C/p%3E%3Cp%3EReady%20to%20glaze!%3C/p%3E%3Cp%3EGlazed!%3C/p%3E%3Cp%3EYou%20can%20see%20that%20I%20lined%20the%20pan%20under%20the%20rack.%20%20Talk%20about%20easy%20cleanup!%20%20You%20will%20also%20note%20that%20I%20didn%E2%80%99t%20put%20any%20liquid%20in%20the%20pan.%20%20Many%20recipes%20recommend%20it.%20%20Mine%20came%20out%20just%20dandy%20without%20it.%20%20So%20again,%20however%20you%20like%20to%20do%20it.%20%20:)%3C/p%3E%3Cp%3EYUM!!%20This%20is%20actually%20a%20staged%20photo%20AFTER%20we%20had%20dinner.%3C/p%3E%3Cp%3EThis%20ham%20was%20so%20good%20that%20we%20dug%20in%20before%20I%20took%20the%20official%20%E2%80%9Cplated%E2%80%9D%20shot,%20so%20I%20took%20this%20after%20we%20ate%20our%20first%20meal%20of%20this%20delicious%20ham.%20%20As%20you%20can%20see,%20we%20had%20Brussels%20sprouts%20and%20mashed%20potatoes%20to%20accompany.%20%20Just%20for%20fun,%20here%20is%20how%20I%20do%20mashed%20potatoes.%3C/p%3E%3Cp%3EI%20steam%20the%20chunks%20of%20potatoes,%20rather%20than%20boil,%20and%20I%20leave%20the%20skin%20on%20if%20they%20are%20organically%20and/or%20locally%20grown%20by%20a%20trusted%20farmer.%20While%20they%20are%20cooking%20I%20heat%20water%20in%20the%20bottom%20of%20a%20double%20boiler%20and%20in%20the%20top%20pan,%20put%20butter,%20olive%20oil,%20and%20finely%20chopped%20shallot%20and%20let%20the%20butter%20melt%20and%20the%20shallot%20infuse%20into%20the%20butter/oil%20mix%20as%20it%20all%20heats%20up.%3C/p%3E%3Cp%3Emashed%20potato%20prep%3C/p%3E%3Cp%3EOnce%20the%20potatoes%20are%20well-cooked,%20I%20move%20the%20top%20pan%20with%20the%20oil%20and%20shallots%20to%20the%20counter%20and%20add%20about%20a%20half%20a%20cup%20of%20dairy,%20whether%20yogurt,%20milk,%20or%20half%20and%20half%20[amount%20based%20on%20four%20mid%20to%20small%20potatoes]%20and%20add%20the%20potatoes,%20some%20salt%20and%20pepper,%20and%20smash%20away,%20right%20in%20the%20top%20pan%20of%20the%20double%20boiler,%20adding%20a%20bit%20of%20water%20if%20needed%20for%20a%20creamier%20texture.%20[Sometimes%20I%20use%20a%20ricer,%20but%20that%20method%20is%20not%20effective%20when%20the%20skins%20are%20on%20the%20taters!]%3C/p%3E%3Cp%3EThe%20advantage%20to%20this%20technique%20is%20that%20you%20can%20make%20the%20potatoes%20early%20on%20in%20the%20meal%20prep%20since%20you%20can%20keep%20them%20warm%20using%20the%20same%20double%20boiler%20pan.%20%20And,%20for%20those%20who%20like%20the%20sour%20cream%20and%20and%20onion%20or%20other%20flavored%20instant%20potato%20mixes,%20you%20can%20easily%20make%20much%20tastier%20and%20healthier%20versions%20(less%20sodium%20and%20better%20quality%20fats!)%20for%20yourself%20with%20this%20method.%3C/p%3E%3Cp%3EAnd%20that%E2%80%99s%20it%20for%20now.%20Use%20locally%20grown%20and%20raised%20foods%20if%20you%20can%20%E2%80%93%20they%20taste%20WAY%20better%20and%20are%20healthier%20choices%20for%20you,%20your%20family,%20and%20our%20environment.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
