%20and%20some%20truffle-infused%20olive%20oil%20my%20friend%20Linda%20Ireland%20gave%20to%20me.%20%20I%20am%20liking%20the%20truffle%20oil.%20%20[Linda,%20we%E2%80%99ll%20have%20to%20make%20something%20with%20it%20sometime%20and%20see%20if%20you%20like%20it%20in%20a%20dish.]%3C/p%3E%3Cp%3EI%20then%20mixed%20together%20some%20nutmeg%20(freshly%20grated),%20cinnamon,%20coriander,%20fennel%20pollen,%20and%20freshly%20ground%20black%20pepper%20%E2%80%93%20tads%20and%20pinches%20of%20each.%20%20I%20then%20added%20about%20a%20teaspoon%20of%20kosher%20salt%20to%20the%20mix%20and%20sprinkled%20it%20onto%20the%20potatoes,%20mixing%20it%20all%20to%20coat%20evenly.%3C/p%3E%3Cp%3EHelpful%20hint%20%E2%80%93%20use%20a%20rubber%20or%20silicon%20spatula%20to%20mix.%20%20The%20spatula%20scrapes%20the%20oil%20from%20the%20side%20of%20the%20bowl%20so%20more%20ends%20up%20on%20the%20potatoes.%3C/p%3E%3Cp%3EI%20then%20put%20the%20potatoes%20in%20a%20pyrex%20baking%20dish%20and%20added%20maybe%20%C2%BD%20cup%20chicken%20broth%20before%20covering%20with%20foil%20and%20cooking%20in%20the%20oven%20with%20the%20ham%20for%20about%2045%20minutes%20at%20325.%20%20Then%20I%20took%20the%20cover%20off%20and%20let%20the%20liquid%20cook%20off%20for%20about%2020%20%20minutes%20at%20300%20degrees,%20stirring%20halfway%20through.%3C/p%3E%3Cp%3EAs%20I%20write%20this,%20I%20have%20the%20ham%20resting%20and%20the%20potatoes%20keeping%20warm%20at%20170%20degrees.%20%20Right%20before%20we%20eat,%20I%20am%20going%20to%20carve%20the%20ham,%20make%20sure%20the%20potatoes%20are%20now%20crisp%20on%20the%20outside,%20raising%20the%20temperature%20a%20bit%20if%20necessary,%20and%20cooking%20up%20the%20veggie%20dish.%20%20Bet%20you%20forgot%20about%20the%20veggie%20dish.%3C/p%3E%3Cp%3ESo,%20yesterday%20I%20noticed%20that%20I%20had%20green%20beans%20and%20cabbage%20in%20the%20veggie%20bin%20of%20my%20fridge.%20%20As%20usual,%20I%20typed%20the%20ingredients%20into%20Google%20and%20came%20up%20with%20a%20gaggle%20(sorry,%20could%20not%20resist)%20of%20recipes%20using%20green%20beans%20and%20cabbage.%20%20I%20opted%20for%20this%20simple%20fare%20but%20for%20the%20one%20spice%20used:%20ground%20coriander.%3C/p%3E%3Cp%3EIt%20has%20been%20so%20long%20since%20I%20have%20posted%20here%20that%20I%20am%20putting%20this%20up%20before%20I%20am%20done%20preparing%20the%20meal,%20but%20doesn%E2%80%99t%20this%20sound%20light%20and%20lovely?%20%20I%20did%20a%20scaled%20down%20version,%20but%20here%20is%20the%20original%20recipe%20from%20which%20I%20was%20working:%3C/p%3E%3Cp%3EGreen%20Beans%20and%20Cabbage%20with%20Coriander%20Butter%3C/p%3E%3Cp%3EThis%20is%20not%20a%20casserole,%20but%20a%20stove%20top%20saute%20that%20is%20both%20unusual%20and%20good.%3C/p%3E%3Cp%3EIn%20a%20large%20skillet,%20melt%20butter%20over%20medium-high%20heat%20for%203%20to%204%20minutes,%20until%20butter%20just%20begins%20to%20turn%20golden%20brown.%20Remove%20from%20heat%20and%20add%20cabbage%20and%20green%20beans;%20toss%20to%20coat%20with%20butter.%20Sprinkle%20in%201%20teaspoon%20ground%20coriander%20and%20toss%20well.%20Return%20to%20stove%20and%20cook%20over%20low%20heat,%20covered,%2010%20to%2015%20minutes,%20until%20vegetables%20are%20crisp-tender,%20stirring%20occasionally.%20Serves%20%206.%3C/p%3E%3Cp%3EI%20used%20about%202%20cups%20%E2%80%93%20firmly%20packed%20%E2%80%93%20of%20chopped%20cabbage%20and%20about%202%20cups%20%E2%80%93%20loosely%20packed%20%E2%80%93%20of%20beans%20and%20will%20probably%20use%203%20T%20of%20butter%20and%20a%20scant%20teaspoon%20of%20the%20coriander.%3C/p%3E%3Cp%3EI%E2%80%99ll%20hopefully%20remember%20to%20update%20here%20on%20the%20final%20results%20once%20I%E2%80%99ve%20made%20this%20recipe%20and%20completed%20the%20meal,%20%20but%20do%20know%20that%20this%20veggie%20recipe%20is%20what%20inspired%20me%20to%20add%20coriander%20to%20the%20potatoes,%20thus%20giving%20me%20an%20opening%20to%20use%20my%20fennel%20pollen.%20%20Not%20a%20lot%20of%20recipes%20call%20for%20fennel%20pollen%20but%20I%20really%20like%20it.%20And%20it%20goes%20wonderfully%20with%20coriander.%3C/p%3E%3Cp%3ESo%20%E2%80%93%20time%20for%20me%20to%20post%20this%20and%20go%20finish%20the%20dinner%20prep.%20%20Hopefully,%20it%20will%20all%20be%20really%20good!%3C/p%3E%3Cp%3EUPDATE:%20The%20potatoes%20were%20exquisitely%20delicious,%20and%20deemed%20excellent%20by%20Steve,%20also.%20%20I%20think%20that%20having%20the%20white%20sweet%20potato%20mixed%20with%20the%20regular%20potato%20added%20to%20it,%20although,%20just%20the%20regular%20potato%20would%20have%20been%20lovely%20as%20well.%3C/p%3E%3Cp%3EAnd,%20I%20had%20chopped%20and%20sauteed%20four%20smallish%20shallots%20in%20olive%20oil%20earlier%20in%20the%20day%20and%20put%20them%20in%20the%20fridge%20for%20later.%20%20I%20added%20them%20into%20the%20green%20beans%20and%20%20cabbage%20at%20the%20end.%20%20And,%20%20before%20the%20end,%20I%20added%201/2%20cup%20chicken%20stock%20and%20cooked%20the%20beans%20and%20%20cabbage%20another%2010%20or%20so%20minutes%20to%20soften%20the%20beans%20further%20before%20finishing%20and%20serving.%20%20Overall,%20a%20most%20wonderful%20meal.%3C/p%3E){kind=link}
