,%20but%20I%20wanted%20to%20share%20these%20two%20recipes%20that%20were%20just%20amazing/delightful/delicious%20finds.%3C/p%3E%3Cp%3ESaturday%20morning,%20I%20came%20across%20this%20recipe%20for%20grilled%20chicken%20with%20a%20corn%20and%20tomato%20salad%20via%20Weight%20Watchers%20and%20decided%20to%20give%20it%20a%20whirl%20for%20dinner.%20It%20was%20pretty%20awesome%20and%20gave%20us%20a%20taste%20of%20summer.%20It%20was%20also%20the%20%20first%20time%20we%20grilled%20this%20year.%20(!!!!)%3C/p%3E%3Cp%3EIt%20went%20quite%20nicely%20with%20a%20pinot%20grigio%20that%20Gray%20picked%20out%20at%20the%20store.%3C/p%3E%3Cp%3EIngredients:%20%201.5%20cups%20uncooked%20yellow%20corn,%20fresh%20(or%20frozen%20and%20cooked),1%20large%20tomato,%20diced,%20%201/4%20cup%20fresh%20cilantro,%201/4%20cup%20lime%20juice,%201%20tsp%20ground%20cumin,%203/4%20tsp%20paprika,%201%20pound%20chicken%20breasts%3C/p%3E%3Cp%3EDirections:%20In%20a%20medium%20bowl,%20combine%20corn,%20tomato,%20cilantro,%202%20tablespoons%20lime%20juice,%20oil%20and%201/4%20teaspoon%20each%20cumin,%20salt%20and%20paprika;%20set%20aside%20for%20flavors%20to%20blend.%3C/p%3E%3Cp%3ECombine%20remaining%202%20tablespoons%20lime%20juice,%203/4%20teaspoon%20cumin,%203/4%20teaspoon%20salt%20and%201/2%20teaspoon%20paprika%20in%20a%20small%20bowl;%20rub%20over%20chicken.%3C/p%3E%3Cp%3EGrill%20chicken,%20flipping%20once,%20until%20cooked%20through,%20about%208%20to%2010%20minutes;%20serve%20topped%20with%20corn%20salad.%3C/p%3E%3Cp%3E(I%20left%20this%20out,%20but%20the%20WW%20version%20also%20calls%20for%20scallions%20and%20salt.%20I%20forgot%20about%20the%20scallions%20and%20generally%20cut%20out%20any%20extra%20salt%20when%20I%20can.%20It%20also%20says%20to%20coat%20the%20chicken%20with%20cooking%20spray,%20which%20I%20skipped%20and%20to%20add%20olive%20oil%20to%20the%20salad%20mix.%20I%20skipped%20both%20of%20those%20as%20well.%20)%3C/p%3E%3Cp%3EWe%20both%20loved%20this%20recipe.%20I%20should%20have%20ideally%20let%20the%20chicken%20marinate%20a%20while,%20but%20%20I%20was%20cooking%20later%20in%20the%20evening%20and%20didn%E2%80%99t%20have%20time.%3C/p%3E%3Cp%3EOur%20other%20recipe%20involved%20steak%20from%20Skinny%20Taste%20(aka%20one%20of%20the%20most%20awesome%20recipe%20sites%20ever).%20We%20were%20definitely%20carnivores%20this%20weekend.%3C/p%3E%3Cp%3EIngredients:%202%20lb%20flank%20steak,%20fat%20trimmed,%20kosher%20salt%20and%20fresh%20pepper,%20garlic%20powder,%201%20tbsp%20extra%20virgin%20olive%20oil,%202%20tbsp%20balsamic,%201/3%20cup%20red%20onion,%20chopped,3-4%20tomatoes,%20chopped%20(about%203%201/2%20cups),1%20tbsp%20fresh%20herbs%20such%20as%20oregano,%20basil%20or%20parsley%3C/p%3E%3Cp%3EDirections:%20Pierce%20steak%20all%20over%20with%20a%20fork.%20Season%20generously%20with%20salt,%20pepper%20and%20garlic%20powder%20and%20set%20aside%20about%2010%20minutes%20at%20room%20temperature.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20onions,%20olive%20oil,%20balsamic,%20salt%20and%20pepper.%20Let%20onions%20sit%20a%20few%20minutes%20with%20the%20salt%20and%20balsamic%20to%20mellow%20a%20bit.%20Combine%20with%20tomatoes%20and%20fresh%20herbs%20and%20adjust%20seasoning%20if%20needed.%3C/p%3E%3Cp%3EHeat%20grill%20or%20broiler%20on%20high%20heat.%20Cook%20steak%20about%207%20minutes%20on%20each%20side%20for%20medium%20rare%20or%20longer%20to%20taste.%20Remove%20from%20grill%20and%20let%20it%20rest%20on%20a%20plate%20for%20about%205%20minutes%20before%20slicing.%3C/p%3E%3Cp%3ESlice%20steak%20think%20on%20the%20diagonal;%20top%20with%20tomatoes%20and%20serve.%3C/p%3E%3Cp%3EI%20generally%20followed%20these%20directions,%20but%20left%20out%20the%20olive%20oil.%3C/p%3E%3Cp%3EIt%20was%20pretty%20freaking%20delicious%20and%20the%20steak%20juice%20mixed%20with%20the%20tomato%20and%20balsamic%20was%20%20pretty%20delightful.%3C/p%3E%3Cp%3EWell,%20that%E2%80%99s%20it.%20Hopefully,%20this%20makes%20up%20for%20my%20drought%20of%20cooking%20last%20week.%20Happy%20start%20to%20the%20week!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
