%3C/p%3E%3Cp%3EIdiazabal%20Cheese%20and%20Fried%20Onion%20Tapa%3C/p%3E%3Cp%3EOh,%20it%E2%80%99s%20been%20a%20week%20for%20the%20pair%20of%20us,%20for%20very%20different%20reasons.%20We%E2%80%99re%20taking%20solace%20in%20the%20fact%20that%20tonight%20we%E2%80%99re%20headed%20to%20Michael%E2%80%99s%20favorite%20place%20in%20the%20city%20to%20find%20rejuvenation%20and%20restoration,%20otherwise%20known%20as%20Dinosaur%20Bar-B-Que.%20If%20you%20can%E2%80%99t%20tell,%20restoration%20for%20us%20comes%20in%20a%20plate%20of%20delicious%20barbecue%20(well,%20for%20me,%20it%E2%80%99s%20their%20phenomenal%20Cuban%20sandwich%20platter%20and%20the%20smoked%20wings)%20because%20it%E2%80%99s%20food%20that%20we%20really%20can%E2%80%99t%20make%20ourselves,%20at%20least%20not%20properly%20with%20a%20smoker%20or%20outdoor%20grill.%20We%E2%80%99ve%20kept%20our%20eating%20out%20at%20a%20minimum%20lately%20for%20a%20variety%20of%20reasons,%20but%20it%E2%80%99s%20finally%20time%20to%20indulge%20in%20food%20that%20we%20can%E2%80%99t%20make%20ourselves%20in%20our%20little%20New%20York%20apartment.%20That%E2%80%99s%20not%20to%20say,%20of%20course,%20that%20we%20haven%E2%80%99t%20been%20enjoying%20ourselves%20on%20that%20end%20as%20well.%3C/p%3E%3Cp%3ETake%20last%20weekend:%20our%20awesome%20friend%20VP%20visited%20us%20from%20Jersey%20for%20dinner,%20and%20we%20saw%20it%20as%20the%20perfect%20excuse%20to%20make%20the%20anniversary%20dinner%20that%20wasn%E2%80%99t%20to%20be,%20i.e.%20roasted%20veal%20short%20ribs.%20With%20more%20than%20enough%20time%20allotted%20to%20order%20them%20in%20advance,%20we%20knew%20we%E2%80%99d%20have%20that%20as%20the%20centerpiece%20of%20the%20meal;%20the%20question%20that%20remained,%20however,%20was%20what%20to%20serve%20with%20it.%20The%20one%20issue%20I%20have%20with%20the%20Les%20Halles%20Cookbook%20is%20that%20it%20features%20very%20few%20side%20dishes%20aside%20from%20those%20that%20are%20potato-based.%20Frankly,%20if%20I%E2%80%99m%20going%20to%20get%20potatoes%20at%20Les%20Halles,%20I%20want%20their%20fries,%20and%20as%20we%E2%80%99ve%20discussed%20before%20that%20can%20be%20a%20mildly%20terrifying%20task%20to%20carry%20through%20at%20home.%3C/p%3E%3Cp%3ESo%20what%20to%20do?%20I%20suggested%20serving%20the%20ribs%20with%20couscous%20as%20it%20would%20be%20quick%20and%20easy%20to%20do,%20but%20something%20a%20little%20more%20substantial%20was%20in%20order%E2%80%93and%20that%E2%80%99s%20how%20I%20came%20to%20making%20two%20more%20taps%20from%20The%20Book%20of%20Tapas.%20Since%20the%20ribs%20needed%20a%20good%20two%20and%20a%20half%20hours%20to%20cook,%20I%20figured%20that%20making%20and%20serving%20the%20tapas%20would%20make%20for%20a%20substantial-enough%20appetizer%20without%20filling%20us%20up%20too%20much.%3C/p%3E%3Cp%3EWild%20Mushroom%20and%20Anchovy%20Fricassee%3C/p%3E%3Cp%3EThe%20two%20here%20served%20us%20very%20well,%20though%20one%20was%20honestly%20a%20little%20tastier%20than%20the%20other.%20The%20mushroom-anchovy%20fricassee%20was%20simply%20all%20right%20when%20compared%20to%20the%20Idiazabal%20tapa%E2%80%93I%20made%20the%20mistake%20of%20using%20Woodear%20mushrooms%20in%20my%20mushroom%20mix,%20and%20they%20threw%20off%20the%20texture%20completely.%20It%20wasn%E2%80%99t%20inedible%20or%20anything,%20but%20after%20the%20indulgence%20of%20both%20the%20Idiazabal%20as%20well%20as%20a%20serving%20of%20queso%20Valde%C3%B3n%20(a%20Spanish%20blue%20cheese%20that%20will%20convince%20you%20that%20you%20can%20like%20blue%20cheese%20even%20if%20you%20think%20it%E2%80%99s%20too%20much),%20we%20were%20left%20with%20some%20sizable%20leftovers.%20I%20think%20we%20all%20couldn%E2%80%99t%20help%20but%20compare%20it%20to%20the%20wild-mushroom%20and%20herbed%20cheese%20tapa%20from%20Barcelona,%20and%20since%20the%20latter%20is%20so%20rich%20and%20savory,%20anything%20more%20subtle%20will%20inevitably%20appear%20wanting%20in%20flavor.%3C/p%3E%3Cp%3EAs%20for%20the%20other%20tapa%20of%20the%20evening,%20well,%20this%20is%20a%20recipe%20for%20anyone%20looking%20for%20something%20simple%20to%20serve%20during%20the%20upcoming%20holiday%20season%20while%20your%20various%20roasts%20have%20at%20it%20in%20the%20oven.%20Idiazabal%20cheese%20(similar%20to%20Manchego,%20but%20a%20little%20more%20robust)%20is%20sliced%20into%20wedges%20and%20marinated%20in%20milk%20and%20crushed%20peppercorns%20for%20a%20half-hour,%20infhsing%20the%20cheese%20with%20a%20little%20more%20flavor%20while%20making%20it%20easier%20to%20sink%20your%20teeth%20into.%20In%20the%20meantime,%20you%20simply%20fry%20a%20sliced%20onion%20in%20oil%20until%20the%20pieces%20become%20nice%20and%20crispy,%20drain%20on%20paper%20towels,%20and%20you%20put%20a%20little%20cheese%20and%20a%20little%20onion%20onto%20a%20slice%20of%20baguette.%20The%20recipe%20also%20called%20for%20a%20drizzle%20of%20honey%20which%20I%20forgot%20to%20add,%20but%20I%20would%20wager%20that%20a%20little%20sweetness%20would%20make%20this%20dish%20even%20more%20delightful%E2%80%93but%20if%20you%20forget%20it%20too,%20no%20one%20will%20be%20the%20wiser.%3C/p%3E%3Cp%3EIdiazabal%20Tapa%20with%20Fried%20Onions%3C/p%3E%3Cp%3Eadapted%20from%20The%20Book%20of%20Tapas%3C/p%3E%3Cp%3Eserves%203%20as%20an%20appetizer%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20add%20cheese%20slices%20and%20peppercorns%20and%20cover%20with%20milk%20until%20the%20cheese%20is%20submerged;%20let%20sit%20for%2030%20minutes.%20In%20the%20meantime,%20heat%201/2%20cup%20of%20oil%20of%20choice%20in%20a%20small%20saucepan%20and%20fry%20the%20onion%20until%20it%20gets%20nice%20and%20crispy%E2%80%93this%20will%20take%20about%2010%20minutes,%20so%20wait%20until%20the%20cheese%20is%20almost%20ready%20to%20do%20this.%20Drain%20the%20onion%20on%20paper%20towels,%20and%20then%20take%20a%20slice%20a%20bread,%20add%20some%20cheese,%20some%20onion%20and%20drizzle%20with%20honey%20if%20desired.%20Serve%20immediately.%3C/p%3E){kind=link}
