%3C/p%3E%3Cp%3ESopa%20Gaireb%C3%A9%20Fredolic%3C/p%3E%3Cp%3EYou%20may%20have%20noticed%20a%20dearth%20of%20anything%20Thanksgiving-related%20(save%20for%20our%20annual%20pre-Thanksgiving%20duck,%20of%20course)%20here%20on%20the%20blog.%20That,%20my%20friends,%20was%20intentional:%20I%E2%80%99m%20not%20the%20biggest%20fan%20of%20Thanksgiving%20food%20to%20begin%20with%20(a%20little%20roast%20turkey%20goes%20a%20long%20way%20for%20me)%20and%20depending%20on%20the%20year%20and%20whose%20house%20we%E2%80%99re%20staying%20at,%20we%20tend%20to%20not%20do%20a%20lot%20of%20cooking.%20That%20probably%20sounds%20a%20little%20strange%20given%20that%20we%20cook%20so%20much%20on%20our%20own,%20but%20Thanksgiving%20is%20a%20day%20so%20steeped%20in%20food%20traditions%20that%20we%E2%80%99ll%20defer%20to%20them%E2%80%93well,%20at%20least%20until%20we%20get%20to%20take%20over%20the%20reigns%20of%20hosting%20the%20meal%20down%20the%20road.%20As%20for%20this%20year,%20Michael%20did%20an%20excellent%20job%20in%20roasting%20a%2019-pound%20bird%20and%20I%20brought%20un%20poco%20de%20Espa%C3%B1a%20into%20the%20mix%20with%20a%20few%20early-afternoon%20tapas%20that%20were%20well-received%20by%20my%20in-laws.%3C/p%3E%3Cp%3EThe%20Thanksgiving%20holiday%20weekend%20marks%20the%20beginning%20of%20the%20slightly-longer-than-a-month%20insanity%20punctuated%20by%20traveling,%20parties,%20projects%20and%20lots%20of%20food%20between%20now%20and%20the%20new%20year,%20and%20I%20for%20one%20am%20already%20craving%20a%20bit%20of%20lightness%20in%20my%20meals%20as%20well%20a%20rested%20mind%20to%20take%20on%20all%20of%20it.%20So%20when%20I%20was%20flipping%20through%20Catalan%20Cuisine%20a%20few%20weeks%20ago%20to%20pick%20out%20a%20meal%20to%20make%20in%20honor%20of%20El%20Cl%C3%A1sico%20(the%20first%20of%20two%20matchups%20between%20FC%20Barcelona%20and%20Real%20Madrid,%20two%20of%20the%20best%20soccer%20teams%20in%20the%20world)%20and%20stumbled%20across%20a%20mushroom%20soup%20that%20looked%20so%20easy%20I%20could%20make%20it%20upon%20coming%20home%20from%20work,%20I%20knew%20I%20had%20found%20the%20perfect%20meal%20to%20balance%20out%20a%20weekend%20of%20gluttony.%20Michael%20helped%20out%20with%20the%20prepping%20of%20the%20mushrooms,%20and%20I%20had%20the%20soup%20on%20the%20table%20in%20about%20a%20half-hour.%20It%20had%20been%20a%20while%20since%20I%20had%20made%20anything%20for%20a%20weeknight%20meal,%20and%20the%20satisfaction%20of%20not%20only%20giving%20Michael%20a%20night%20off%20from%20the%20kitchen%20as%20well%20as%20making%20something%20tasty%20did%20much%20to%20boost%20my%20spirits%20as%20the%20soup%20did%20in%20restoring%20a%20sense%20of%20lightness.%3C/p%3E%3Cp%3EAs%20for%20the%20soccer%20game?%20Well,%20my%20Bar%C3%A7a%20boys%20carried%20themselves%20well%20and%20trounced%20their%20biggest%20rivals%20in%20a%205-0%20rout%20at%20Camp%20Nou.%20It%20was%20a%20pretty%20extraordinary%20game%20to%20witness%E2%80%93it%20was%20some%20of%20the%20best%20playing%20they%E2%80%99ve%20done%20all%20season,%20and%20two%20of%20my%20favorite%20players%20contributed%20three%20goals,%20two%20of%20them%20scored%20within%20three%20minutes%20of%20each%20other.%20All%20told,%20it%20was%20a%20good%20day,%20and%20I%20encourage%20you%20to%20take%20a%20moment%20and%20whip%20up%20%20a%20simple%20soup%20whenever%20you%E2%80%99re%20feeling%20overwhelmed,%20overworked%20or%20overfed%20this%20holiday%20season.%3C/p%3E%3Cp%3E%EF%BB%BFSopa%20Gaireb%C3%A9%20Fredolic%20(or%20Almost%20Fredolic%20Soup,%20as%20I%20could%20not%20get%20Fredolic%20mushrooms)%3C/p%3E%3Cp%3Eadapted%20from%20Catalan%20Cuisine%20by%20Colman%20Andrews%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3E2%20pounds%20mushrooms%20(the%20original%20recipe%20calls%20for%20medium-bodied%20wild%20mushrooms,%20but%20I%20used%20a%20combination%20of%20button,%20cremini%20and%20shiitake%20and%20they%20worked%20out%20well),%20halved/quartered%20to%20near-uniform%20size%3C/p%3E%3Cp%3E1%20quart%20chicken%20broth%3C/p%3E%3Cp%3ESalt/pepper%3C/p%3E%3Cp%3E2%20sprigs%20thyme%3C/p%3E%3Cp%3E2%20scallions,%20thinly%20sliced%20with%20green%20and%20white%20ends%20trimmed%3C/p%3E%3Cp%3EAdd%20a%20tablespoon%20or%20so%20of%20olive%20oil%20to%20a%20soup%20pot%20or%20a%20Dutch%20oven;%20bring%20to%20medium%20heat.%20Add%20pancetta%20and%20render%20out%20the%20fat%20for%20about%20a%20minute%20or%20two%20before%20adding%20garlic.%20Heat%20for%20another%202-3%20minutes.%20Add%20mushrooms%20and%20cook%20until%20they%20release%20most%20of%20their%20water,%20which%20will%20take%20about%2010%20minutes.%20During%20this%20time%20add%20a%20little%20oil%20to%20help%20cooking%20(make%20a%20well%20in%20the%20middle%20of%20the%20mushrooms%20every%20three%20minutes%20for%20the%20first%20six%20and%20then%20stir%20vigorously)%20and%20season%20with%20salt%20to%20help%20extract%20the%20water.%20When%20a%20nice%20little%20broth%20has%20materialized%20in%20the%20pot,%20add%20a%20quart%20of%20chicken%20broth,%20throw%20in%20the%20thyme%20and%20bring%20
