%3C/p%3E%3Cp%3ELa%20calda%20con%20fideos%3C/p%3E%3Cp%3EAlternate%20titles%20for%20this%20post%20included:%20One%20stew%20to%20rule%20them%20all,%20You%20call%20that%20a%20stew?%20THIS%20is%20a%20stew,%20and%20finally,%20The%20epic%20stew%20of%20epicness.%20Working%20in%20an%20academic%20lab%20here%20in%20NYC%20for%20the%20last%201.5%20years,%20I%20have%20been%20exposed%20to%20many%20college%20students%20and%20their%20requisite%20speech%20patterns.%20One%20word%20I%20hear%20often%20(besides%20random)%20is%20%E2%80%98epic%E2%80%99,%20used%20to%20mean%20something%20impressive.%20That%E2%80%99s%20a%20poor%20definition,%20for%20a%20more%20complete%20definition,%20read%20on.%3C/p%3E%3Cp%3EBoiling%20the%20meat%3C/p%3E%3Cp%3EI%E2%80%99d%20like%20an%20editor%E2%80%99s%20note%20here%20about%20where%20E%20came%20up%20with%20this%20crazy%20idea,%20but%20in%20Spanish%20cooking,%20they%20have%20an%20elaborate%20dish%20of%20stewed%20meats%20and%20vegetables%20known%20as%20cocido.%20[Ed.--I%20first%20found%20out%20about%20this%20dish%20via%20A%20Girl%20in%20Madrid%20and%20consulted%20two%20cookbooks--Barcelona%20and%20Catalan%20Cuisine--to%20create%20a%20mash-up%20of%20a%20recipe].%20Using%20the%20statistic%20that%20the%20dish%20contains%20%E2%80%98nine%20kinds%20of%20meat%20and%20seven%20vegetables%E2%80%99,%20she%20easily%20enticed%20me%20into%20taking%20a%20run%20at%20this%20beast.%20She%20knows%20me%20too%20well.%20%E2%80%98Pasta%20cooked%20in%20consomme%E2%80%99%20was%20simply%20the%20icing%20on%20the%20cake.%3C/p%3E%3Cp%3EThe%20meats%20and%20the%20vegetables%20are%20mingling.%3C/p%3E%3Cp%3EIn%20my%20mind,%20the%20cooking%20proceeded%20in%20four%20stages.%20The%20first%20was%20boiling%20a%20pot%20of%20water%20containing%20beef%20bones,%20some%20beef%20shanks,%20chicken%20pieces,%20and%20a%20halved%20pig%20foot,%20skimming%20often%20for%20one%20hour.%20The%20second%20stage%20was%20the%20addition%20of%208%20oz%20of%20soaked%20chick%20peas%20and%20another%20hour%20of%20cooking.%20%20Next,%20chopped%20onion,%20celery,%20carrot,%20parsnip,%20cabbage,%20potato%20and%20leeks%20and%20were%20simmered%20for%20a%20third%20hour.%20In%20the%20final%20stage,%20we%20added%20some%20meatballs%20we%20had%20made%20to%20the%20top%20of%20the%20pot%20along%20with%20some%20chorizos,%20sausage%20and%20blood%20sausages,%20covered%20and%20cooked%20for%2030%20more%20minutes.%20Finally,%20we%20strained%20off%20the%20broth%20(now%20so%20laden%20with%20gelatin%20that%20the%20leftovers%20solidified%20in%20the%20fridge%20pretty%20much%20instantly)%20and%20added%20it%20to%20a%20saucepan%20and%20used%20it%20to%20cook%20some%20fideos%20noodles.%3C/p%3E%3Cp%3EAdding%20the%20chorizos%20-%20paprika%20bleeding%20into%20the%20broth%3C/p%3E%3Cp%3ETraditionally,%20the%20cocido%20is%20consumed%20in%20two%20or%20three%20courses:%20the%20pasta%20first,%20then%20the%20veggies%20and%20finally%20the%20meat%20(or%20by%20combining%20the%20last%20two).%20I%20would%20have%20liked%20to%20spread%20it%20all%20out,%20but%20too%20much%20of%20the%20meat%20had%20broken%20down%20to%20make%20it%20easy%20to%20separate%20from%20the%20veggies.%20Still,%20it%20was%20amazing,%20truly%20mind-blowing.%20We%20had%20leftovers%20all%20week%20and%20I%20even%20gave%20some%20to%20a%20c0-worker%20for%20lunch%20after%20she%20screamed%20and%20yelled%20about%20how%20good%20it%20was%20after%20she%20tasted%20it%20the%20previous%20day.%20The%20broth%20is%20key%20to%20the%20dish,%20along%20with%20the%20intermingling%20of%20all%20the%20constituent%20flavors.%20It%20requires%20essentially%20no%20herb%20or%20spice%20additions,%20just%20some%20salt%20and%20pepper.%3C/p%3E%3Cp%3EStraining%20the%20liquid%20gold%3C/p%3E%3Cp%3EI%20mean,%20COME%20ON.%3C/p%3E%3Cp%3ETo%20sum%20up,%20from%20construction%20and%20consumption,%20this%20meal%20was%20truly%20epic,%20the%20stuff%20of%20legend.%20I%20will%20be%20attempting%20this%20again%20soon,%20hoping%20to%20maintain%20the%20integrity%20of%20the%20meats%20a%20bit%20more%20via%20better%20heat%20control%20in%20the%20middle%20stages.%20However%20I%20must%20reiterate,%20I%20have%20no%20regrets.%20So%20readers,%20I%20offer%20a%20suggestion%20to%20you%20that%20you%20try%20your%20hand%20at%20the%20stuff%20legend%20during%20these%20long%20cold%20days%20of%20winter.%20You%20never%20know,%20perhaps%20one%20day%20songs%20will%20be%20sung%20and%20stories%20told%20about%20your%20endeavors.%20Cook%20on!%3C/p%3E%3Cp%3ECocido,%20round%20two:%20meat%20and%20vegetables%3C/p%3E%3Cp%3ECocido%20de%20Barcelona%3C/p%3E%3Cp%3Eadapted%20from%20Barcelona%20%20and%20Catalan%20Cuisine%3C/p%3E%3Cp%3EServes%2010%3C/p%3E%3Cp%3EIn%20a%20large,%20heavy%20pot%20(preferably%20a%20Dutch%20oven)%20fill%20it%202/3%20with%20water%20and%20add%20the%20pancetta,%20marrow%20bones,%20stewing%20beef,%20chicken%20thighs,%20pig%E2%80%99s%20foot%20and%20bring%20to%20a%20boil.%20Keep%20the%20lid%20off%20and%20skim%20off%20any%20foam%20that%20appears,%20boiling%20for%20an%20hour.%3C/p%3E%3Cp%3EDrain%20the%20chickpeas%20and%20add%20them%20to%20the%20pot,%20and%20cook%20for%20another%20hour.%20After%20that%20hour,%20add%20the%20potatoes,%20parsnips,%20carrots,%20cabbage,%20onion%20and%20leeks%20and%20boil%20for%20another%20hour.%3C/p%3E%3Cp%3EWhile%20the%20cocido%20is%20boiling,%20make%20the%20meatballs:%20add%20the%20veal,%20crumbled%20ground%20pork%20egg,%20parsley,%20and%20minced%20garlic%20and%20season%20with%20salt%20and%20pepper.%20Roll%20into%20balls%20(about%2010%20or%20so),%20dust%20generously%20with%20flour,%20and%20chill%20in%20the%20refrigerator%20until%20ready%20to%20use.%3C/p%3E%3Cp%3EAfter%20three%20hours%20of%20cooking,%20taste%20the%20broth%20(it%20should%20taste%20pretty%20amazing%20at%20this%20point)%20and%20season%20as%20needed%20with%20salt%20and%20pepper.%20Reducing%20the%20heat%20to%20low,%20add%20the%20meatballs,%20chorizos,%20blood%20sausages%20and%20raw%20sausage%20to%20the%20pot,%20cover%20and%20cook%20until%20the%20sausages%20and%20meatballs%20are%20firm%20and%20opaque%20(double%20check%20with%20a%20digital%20probe%20if%20necessary),%20or%20another%2030%20minutes.%20Remove%20from%20heat%20and%20ladle%20out%20as%20much%20of%20the%20broth%20as%20possible%20from%20the%20pot,%20pouring%20it%20through%20a%20strainer%20into%20a%20saucepan.%20In%20an%20empty%20saucier%20or%20other%20small%20pot,%20toast%20the%20saffron%20threads%20over%20medium%20heat%20for%20about%20five%20minutes%20and%20if%20desired,%20grind%20to%20a%20powder%20with%20a%20mortar%20and%20pestle%20(but%20we%20just%20kept%20them%20whole).%20Throw%20them%20and%20the%20fideos%20into%20the%20broth%20and%20simmer%20over%20low%20heat%20until%20the%20noodles%20are%20soft.%20Ladle%20into%20bowls%20for%20the%20first%20course,%20eat,%20and%20attempt%20to%20not%20go%20into%20a%20food%20coma.%3C/p%3E%3Cp%3EFor%20the%20second%20course,%20arrange%20the%20meats%20and%20vegetables%20into%20bowls%20or%20into%20a%20large%20serving%20platter%20and%20serve.%20Allow%20yourself%20to%20go%20into%20a%20food%20coma%20when%20you%E2%80%99ve%20had%20your%20fill.%3C/p%3E){kind=link}
