Thanks for sharing your wonderful blog here. My dad is very disabled with osteoarthritis and is in a wheelchair with my mom caring for him 24 hours a day.

One of my siggestions for people with limited energy is to use a kid's cookbook which has very simple, but very good recipes in them. I know I get tired just reading recipes with many ingredients and lots of preparation. Also, team cooking is good: team up with your spouse, a friend, or a child to share the "duties." Kids, especially love to stir or cut things up (age appropriate). Even little ones can stir with a big spoon in a large bowl or cut with a plastic knife or pound crackers into crumbs in a ziploc bag.
