I moved from Tennessee to Belize 19 years ago and really love the laid back life style of the Caribbean. My friends love my Southern cooking, just can't get into the cooking style of rice and beans everyday. I have been a widow for 7 years and have 4 dogs and 1 cat. I recently retired from the health care field and spend my days going to the beach or just driving my truck into the mountains to a new area I haven't seen before, there are beautiful waterfalls in Belize. During the rainy season I garden and play with my dogs. I sit on my back porch and enjoy all the animals and birds who come into my yard. I tried having a vegetable garden, but these same animals came and enjoyed them before me. One morning I woke up and there was a crocodile at my front gate. I think he wanted to 'play' with my dogs. Glad I have a strong fence.

My main influence comes from growing up in the South, but I have acquired some Spanish and Caribbean recipes.
