?%3C/p%3E%3Cp%3EI%20must%20confess%20that%20I've%20never%20made%20Guacamole%20before.%20It%20has%20always%20been%20so%20convenient%20for%20others%20to%20make%20or%20bring%20to%20a%20party%20that%20it%20never%20really%20crossed%20my%20mind%20to%20do%20it%20myself;%20however,%20the%20other%20day%20there%20were%20two%20nice%20sized%20Avocados%20staring%20at%20me%20in%20the%20face%20on%20the%20kitchen%20counter,%20perfectly%20ripe,%20not%20too%20soft,%20not%20too%20hard.%20The%20mood%20struck%20me%20to%20prepare%20one%20of%20them%20sliced%20with%20a%20drizzle%20of%20my%20Dijon%20vinaigrette,%20along%20with%20a%20couple%20slices%20of%20crusty%20French%20bread.%20Stopping%20short%20of%20running%20the%20knife%20though%20the%20peeling,%20I%20decided,%20since%20I%20had%20nothing%20better%20to%20do,%20to%20come%20up%20with%20a%20recipe%20for%20Guacamole,%20my%20way.%20And%20so%20I%20ventured%20into%20uncharted%20territory%20and%20began%20to%20gather%20my%20ingredients,%20creating%20the%20recipe%20along%20the%20way.%20Here's%20what%20I%20came%20up%20with:%3C/p%3E%3Cp%3ECut%20each%20Avocado%20in%20half,%20remove%20the%20pits,%20and%20carefully%20remove%20the%20meat%20from%20the%20shell%20with%20a%20spoon%20into%20a%20bowl.%20Set%20the%20shell%20halves%20aside.%20%20Using%20a%20fork,%20mash%20the%20avocado%20meat%20and%20pour%20the%20lemon%20juice%20in,%20%20stirring%20well%20so%20that%20ingredient%20is%20well%20incorporated.%20Now%20add%20the%20sweet%20chili%20sauce,%20green%20onion%20and%20parsley%20and%20stir.%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20saute%20pan,%20heat%20the%20olive%20oil%20over%20medium%20heat.%20Saute%20the%20chopped%20onion,%20garlic,%20and%20pimientos%20until%20onion%20is%20softened%20and%20translucent.%20This%20usually%20takes%20about%205%20minutes.%20Remove%20from%20heat%20and%20allow%20to%20cool.%3C/p%3E%3Cp%3EOnce%20cooled,%20add%20sauteed%20mixture%20to%20the%20avocado%20and%20mix%20thoroughly.%20Add%20a%20couple%20pinches%20of%20salt%20and%20pepper%20and%20taste%20for%20correct%20seasoning.%3C/p%3E%3Cp%3EWith%20a%20spoon,%20return%20the%20avocado%20mixture%20to%20the%20shells,%20cover%20tightly%20with%20plastic%20wrap,%20and%20refrigerate%20for%20about%20an%20hour.%20Serve%201/2%20avocado%20per%20person%20along%20with%20chips%20and%20a%20spoon.%20You%20may%20just%20want%20to%20use%20the%20spoon%20alone.%20This%20recipe%20is%20absolutely%20delicious%20and%20works%20great%20as%20an%20appetizer%20or%20snack%20for%20the%20Sunday%20ball%20games.%20I%20think%20I%20finally%20made%20my%20first%20Guacamole%20-%20or%20at%20least%20my%20version%20of%20it.%3C/p%3E){kind=link}
