.%20You%20could%20fold%20the%20stuffing%20the%20same%20way%20as%20in%20the%20previous%20post,%20but%20today%20I'm%20going%20to%20show%20you%20another%20way%20of%20folding%20in%20the%20stuffing,%20that%20personally%20for%20me,%20is%20way%20more%20interesting%20and%20fun%20than%20the%20previous%20method.%3C/p%3E%3Cp%3EI%20found%20this%20method%20in%20a%20Nita%20Mehta%20book,%20Paranthas%20Aachars%20&%20Chutneys,%20but%20the%20procedure%20and%20photographs%20there%20seemed%20complicated,%20so%20I%20asked%20my%20friend%20Priya%20to%20demonstrate%20it%20for%20me,%20after%20which%20it%20seemed%20doable.%20That's%20one%20reason%20I've%20taken%20more%20step-by-step%20pics%20of%20this%20method,%20because%20I%20know%20how%20it%20seemed%20difficult%20to%20me%20from%20the%20way%20it%20was%20presented%20in%20the%20book-I'm%20trying%20to%20rectify%20that%20here!%20The%20stuffings%20given%20below%20are%20Priya's.%3C/p%3E%3Cp%3EFor%20the%20dough:%3C/p%3E%3Cp%3E3%20cups%20whole%20wheat%20flour%3C/p%3E%3Cp%3ESalt%20to%20taste%3C/p%3E%3Cp%3E1%20cup%20water%20(if%20it's%20lukewarm,%20you'll%20get%20a%20softer%20dough)%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20combine%20the%20flour%20and%20salt%20well.%3C/p%3E%3Cp%3EAdd%20the%20water%20gradually%20and%20combine%20with%20the%20flour%20to%20make%20a%20soft%20but%20firm%20dough.%20Knead%20until%20smooth%20for%201%20to%202%20minutes.%20Leave%20it%20to%20rest,%20covered%20with%20a%20cloth,%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3EBy%20the%20way,%20I%20love%20adding%20dried%20fenugreek%20leaves%20(kasuri%20methi)%20to%20my%20dough%20whenever%20I%20make%20chapathis,%20so%20that's%20the%20green%20speckles%20you%20can%20see%20in%20the%20dough.%3C/p%3E%3Cp%3EStuffings:%3C/p%3E%3Cp%3E1.%20Paneer:%3C/p%3E%3Cp%3E100%20g%20paneer,%20mashed%20or%20crumbled%3C/p%3E%3Cp%3EA%20pinch%20of%20black%20salt%20(kaala%20namak)%3C/p%3E%3Cp%3ESalt%20to%20taste%3C/p%3E%3Cp%3EPepper%20to%20taste%3C/p%3E%3Cp%3EGaram%20masala%20powder%20to%20taste%3C/p%3E%3Cp%3E2%20tablespoons%20coriander%20leaves,%20chopped%3C/p%3E%3Cp%3E(You%20could%20also%20add%20one%20onion%20and%20one%20green%20chilly,%20all%20chopped%20fine.%20I%20didn't%20do%20this).%3C/p%3E%3Cp%3EMix%20all%20this%20together%20in%20a%20bowl%20and%20keep%20aside.%3C/p%3E%3Cp%3EIn%20a%20pressure%20cooker,%20saute%20and%20fry%20all%20the%20above%20and%20cook%20for%202%20whistles%20(with%20just%20a%20drizzle%20of%20water).%3C/p%3E%3Cp%3EOr%20cook%20in%20a%20closed%20pan%20until%20the%20sprouts%20are%20soft.%3C/p%3E%3Cp%3EOr%20%20grind%20the%20sprouts%20first%20in%20a%20mixer%20to%20a%20coarse%20powder%20if%20you%20want%20a%20smoother%20stuffing.%3C/p%3E%3Cp%3EOr,%20if%20you%20are%20sprouting%20the%20beans%20at%20home,%20leave%20it%20to%20sprout%20for%202%20days%20at%20least,%20at%20which%20point%20it%20will%20become%20soft%20enough%20for%20you%20to%20use%20it%20without%20any%20cooking%20required!%3C/p%3E%3Cp%3ETo%20make%20the%20paratha:%3C/p%3E%3Cp%3EDivide%20the%20dough%20into%20lemon-sized%20balls.%3C/p%3E%3Cp%3E(This%20would%20be%20the%20right%20time%20to%20heat%20up%20the%20tawa/griddle).%3C/p%3E%3Cp%3ETake%20one%20ball%20and%20roll%20it%20out%20into%20a%20circle%20of%20about%205%20inches%20in%20diameter.%3C/p%3E%3Cp%3EPlace%20a%20tablespoon%20or%20two%20of%20any%20one%20of%20the%20fillings%20in%20the%20middle,%20then%20spread%20it%20to%20cover%20the%20whole%20roti%20surface.%3C/p%3E%3Cp%3EWith%20a%20knife,%20make%20a%20slit%20from%20the%20periphery%20of%20the%20roti%20to%20the%20center.%3C/p%3E%3Cp%3ENow,%20take%20one%20side%20of%20the%20slit%20roti%20and%20roll%20it%20in%20a%20clockwise%20direction,%20like%20a%20cone.%3C/p%3E%3Cp%3EWhen%20you%20reach%20the%20other%20side%20of%20the%20slit,%20make%20the%20cone%20stand%20upright.%3C/p%3E%3Cp%3EPress%20down%20lightly%20with%20your%20palm%3C/p%3E%3Cp%3ENow%20take%20your%20rolling%20pin%20and%20applying%20slight%20pressure%20at%20the%20center,%20roll%20out%20the%20roti%20gently%20towards%20the%20outside,%20to%20make%20a%20disc%20as%20large%20or%20thick/thin%20as%20you%20want.%3C/p%3E%3Cp%3ETransfer%20to%20your%20tawa/griddle%20and%20wait%20for%20a%20few%20minutes,%20then%20flip%20over.%3C/p%3E%3Cp%3EWhen%20both%20sides%20have%20become%20polka-dotted%20with%20brown%20spots,%20remove%20from%20the%20tawa%20and%20spread%20ghee/butter%20over%20it.%3C/p%3E%3Cp%3EServe%20hot%20with%20spicy%20yogurt%20or%20pickles%3C/p%3E%3Cp%3ETIPS:%20Adding%20a%20blob%20of%20butter%20on%20the%20paratha%20just%20before%20eating%20it,%20when%20it%20is%20still%20hot%20and%20crispy,%20makes%20it%20even%20more%20yummilicious!%3C/p%3E%3Cp%3EHere%20are%20the%20step%20by%20step%20pics:%3C/p%3E%3Cp%3EAnd%20the%20yummy%20paratha%20with%20a%20side%20of%20yogurt%20garnished%20with%20some%20chilli%20powder%3C/p%3E){kind=link}
