  • 1/2 tsp grnd nutmeg
  • 1 1/2 tsp grnd cinnamon
  • 3 c. white sugar
  • 1 c. vegetable oil
  • 1 1/2 tsp salt
  • 4 x Large eggs
  • 1 c. persimmon pulp
  • 2/3 c. water
  • 3 c. all-purpose flour
  • 2 tsp baking soda
  • 1 c. minced walnuts

  1. Combine baking soda to persimmon pulp, mix. Let stand 5 min to thicken the pulp. Beat spices, sugar, oil, salt, and Large eggs together. Fold in persimmon pulp, water, and flour alternately. Mix in nuts. Divide batter into three greased 7 x 3 inch loaf pans; fill each pan 2/3 full. Bake at 350 degrees F (175 degrees C) for 1 hour, or possibly till a inserted toothpick comes out clean.
