My
five weeks of medical leave comes to an official end, as of today. (For
those of you who didn't know, I had knee surgery on October 15th.)
Thankfully, all went well, and I'm ready to get back to work. My
ability to stand, for longer stretches of time, is starting to improve.
NOTE: If you don't own a pressure cooker, or are afraid of them (which is totally unnecessary), I'll explain how to make this the conventional way.

%3C/p%3E%3Cp%3EThankfully,%20all%20went%20well,%20and%20I'm%20ready%20to%20get%20back%20to%20work.%20My%3C/p%3E%3Cp%3Eability%20to%20stand,%20for%20longer%20stretches%20of%20time,%20is%20starting%20to%20improve.%3C/p%3E%3Cp%3ENOTE:%20If%20you%20don't%20own%20a%20pressure%20cooker,%20or%20are%20afraid%20of%20them%20(which%20is%20totally%20unnecessary),%20I'll%20explain%20how%20to%20make%20this%20the%20conventional%20way.%3C/p%3E%3Cp%3EThe%20first%20thing%20I%20did,%20was%20to%20cut%20the%20recipe%20to%20be%20for%20two%20people,%20instead%20of%20six.%20%20In%20my%20electric%20pressure%20cooker,%20I%20browned%20boneless,%20skinless,%20chicken%20thighs%20in%20a%20little%20butter%20and%20oil.%20%20(Yes,%20electric%20pressure%20cookers%20have%20a%20browning%20cycle.)%20%20Naturally,%20you%20can%20do%20this%20in%20a%20Dutch%20oven.%3C/p%3E%3Cp%3EFlip%20'em%20over.%20Them%20remove%20onto%20a%20plate%20and%20set%20aside.%3C/p%3E%3Cp%3ELet's%20talk%20about%20cooking%20with%20hard%20liquor.%20%20I%20don't%20drink%20whiskey.%20I've%20never%20liked%20the%20taste%20of%20it,%20no%20matter%20how%20hard%20I%20tried.%20However,%20cooking%20with%20whiskey%20(or%20bourbon)%20is%20a%20whole%20different%20topic.%20%20I%20especially%20like%20whiskey%20in%20sauces,%20and%20I%20don't%20buy%20the%20higher%20end%20pricey%20brand%20names.%20%20I%20also%20use%20whiskey%20when%20making%20my%20%22Candied%20Sweet%20Potatoes--%20kicked%20up%22.%20%20Love.%3C/p%3E%3Cp%3ETo%20make%20the%20sauce,%20I%20cooked%20some%20onion%20until%20tender.%20Then,%20I%20added%20about%201/4%20cup%20of%20whiskey%20and%20let%20it%20reduce.%3C/p%3E%3Cp%3ENext,%20I%20added%20about%201%20cup%20of%20barbecue%20sauce%20(any%20brand%20will%20do).%20%20For%20some%20sweetness,%20I%20added%20homemade%20peach%20preserves%20(commercial%20brand%20is%20fine)%20and%20a%20little%20Worcestershire%20sauce.%20%20Last,%20I%20tossed%20it%20a%20couple%20of%20peeled%20garlic%20cloves.%20Done!%3C/p%3E%3Cp%3EI%20returned%20the%20chicken%20into%20the%20sauce%20and%20locked%20on%20the%20lid%20to%20my%20pressure%20cooker.%20I%20set%20it%20for%20HIGH%20for%20ten%20minutes.%20%20Otherwise,%20you%20can%20bake%20this%20at%20300F%20for%20an%20hour%20to%20an%20hour%20and%20a%20half.%3C/p%3E%3Cp%3ENOTE:%20Ree%20has%20two%20versions%20of%20this%20recipe.%20In%20one%20version%20she%20adds%20sliced%20fresh%20peaches.%20I'll%20try%20that,%20next%20time.%3C/p%3E%3Cp%3EThe%20marvel%20of%20pressure%20cooking%20is%20that%20ten%20minutes%20later,%20the%20chicken%20was%20fully%20cooked!%3C/p%3E%3Cp%3EI%20served%20this%20over%20homemade%20creamy%20mashed%20potatoes,%20and%20garnished%20it%20with%20scallions.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20While%20this%20isn't%20authentic%20barbecue,%20the%20flavors%20are%20right%20there.%20%20The%20chicken%20was%20super%20tender,%20and%20we%20liked%20the%20sweet%20and%20savory%20flavor%20of%20the%20sauce/gravy.%20%20My%20husband%20(who%20also%20doesn't%20drink%20whiskey)%20didn't%20even%20notice%20it.%20%20There's%20something%20magical%20that%20happens%20when%20cooking%20with%20whiskey--%20it%20gives%20a%20deeper%20flavor,%20but%20it's%20not%20overpowering.%3C/p%3E%3Cp%3EI%20don't%20think%20it%20really%20matters%20if%20you%20use%20bone-in%20or%20boneless%20chicken.%20%20Can%20you%20use%20chicken%20breasts?%20I%20don't%20see%20why%20not,%20though%20can%20have%20a%20tendency%20to%20dry%20out.%20%20However,%20with%20pressure%20cooking,%20I%20find%20that%20chicken%20breasts%20tend%20to%20retain%20their%20moisture%20a%20lot%20more.%3C/p%3E%3Cp%3EWould%20I%20make%20this%20again?%20Sure!%20%20I%20always%20keep%20chicken%20thighs%20in%20the%20freezer,%20because%20my%20men%20love%20it%20when%20I%20make%20%22Man%20Pleasing%20Chicken%22.%20%20%20This%20is%20a%20good%20way%20for%20me%20to%20use%20up%20barbecue%20sauce,%20as%20well.%3C/p%3E%3Cp%3EThis%20is%20a%20really%20fast%20recipe%20to%20put%20together,%20without%20a%20whole%20lot%20of%20fuss.%20%20Before%20anyone%20asks--%20what%20if%20you%20are%20making%20this%20for%20kids?%20%20Well,%20I%20would%20suggest%20to%20just%20leave%20out%20the%20whiskey!%20I%20don't%20think%20it%20would%20hurt%20the%20recipe%20at%20all.%20%20But,%20if%20you're%20a%20grown%20up,%20I%20say%20give%20it%20a%20go!%20%20You%20can%20always%20buy%20those%20%22airline%22%20size%20bottles%20of%20whiskey,%20if%20you%20don't%20drink%20it%20much.%3C/p%3E%3Cp%3EComing%20up%20next:%20Slow%20Cooker%20Pork%20Loin%20Roast%20with%20Cranberry%20Orange%20Sauce.%20%20Wow%20was%20this%20one%20easy!%3C/p%3E%3Cp%3EI%20haven't%20baked%20in%20a%20whole%20month,%20so%20that's%20my%20afternoon%20project.%20I%20have%20a%20bowl%20of%20freshly%20picked%20Meyer%20lemons,%20and%20I%20have%20lots%20of%20ideas!%3C/p%3E){kind=link}
