Ингредиенты

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 cups sifted pastry flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. lemon zest
  • 1/2 tsp. lemon extract
  • 1 cup milk
  • Filling;
  • 3/4 cup sugar
  • 5 tbsp. cornstarch
  • 3/4 cup water
  • 3 tbsp lemon juice
  • 1/'2 tsp. lemon zest
  • 1 tbsp butter

Инструкции

  1. Cake;
  2. Preheat oven to 350 F
  3. cream shortening & sugar, & beat the eggs in
  4. til smooth & light.
  5. Sift the dry ingredients & mix in alternately
  6. with the milk.
  7. Stir in lemon zest.
  8. Bake in two greased & floured layer pans
  9. for 25 - 30 min.
  10. Cool & fill with lemon filling & plain butter icing
  11. Filling;
  12. Blend sugar & cornstarch & stir in the water til smooth
  13. Bring to a boil over medium heat, stirring constantly,
  14. til thick & smooth.
  15. Remove from heat & add remaining ingredients stirring
  16. til butter is melted.
  17. Cool & fill layer cake ( can also use as frosting)
