This vintage bar cookie recipe should be included in the Oldie-But-Goodie Cookie Hall of Fame. Great for a brunch treat, snack or coffee break, it is dated 1960 but is timeless in appeal. Easily tweaked to reduce fat (swap out half the oil with equivalent amount of applesauce) or reduce sugar (sub non-nutritive sweetener alternatives.) Don’t like raisins? Use dried cranberries.

  1. Combine raisins and water in medium saucepan and bring to a boil; remove from heat. Stir in oil and cool to lukewarm (you can speed this up by chilling in refrigerator or placing pan in large bowl of ice water.) Stir in sugar and egg.
  2. In large bowl stir together the flour, salt, baking soda, cinnamon, nutmeg, allspice, cloves and walnuts. Add raisin mixture and stir just enough to incorporate ingredients well.
  3. Pour into a 13 x 9 x 2-inch baking pan. Bake at 375 degrees 20 minutes or until done. When cool, cut into 24 bars or squares. Before serving dust top lightly with powdered sugar.
