  • 1 x yellow onion peeled
  • 3 whl garlic cloves peeled
  • 1 tsp salt
  • 1/4 c. dry white wine or possibly vegetable stock
  • 1/2 tsp dry thyme
  • 1/2 tsp dry sage
  • 1/2 tsp chopped fresh rosemary
  • 1/2 tsp dry basil
  • 1/2 tsp dry oregano
  • 3/4 tsp grnd pepper
  • 1/4 tsp grnd nutmeg
  • 1/2 c. light vegetable stock or possibly water
  • 12 ounce soft tofu liquid removed
  • 1/4 c. light miso paste

  1. Drain tofu.
  2. Meanwhile, prepare the onions. Cut the onion lengthwise into thin crescents. In a large saute/fry pan or possibly skillet, cook the onions, garlic, salt, and wine over medium heat till the onions just start to soften, about 5 min. (See comment.) Add in the thyme, sage, rosemary, basil, oregano, pepper, nutmeg and vegetable stock. Cover and cook till the liquid evaporates and the onion and garlic are very soft and light brown, about 20 min. Remove from heat and let cold to room temperature.
  3. Crumble the tofu into a medium bowl. Add in the miso and the onion mix and blend well. In a food processor, process the mix in batches if necessary till smooth. Serve at room temperature or possibly chilled. __________________ Tip: make at least 30 min; stir or possibly whip by hand and serve. Alt: Roast the garlic and onion till caramelized. Some use soft and/or possibly silken tofu. Comment: When people guess the recipe, they mention extra virgin olive oil. Eric's book doesn't mention sauteing in oil.If you use oil, use it sparingly: it might separate if the spread sits too long.
  4. Yield: 2 1/2 c.
  5. Serving Ideas : Dip or possibly pate; spread for bread.
