Рецепт Lithuanian Napoleonas (Torte Napoleon)

  • 4 c. Flour
  • 1 lb Lightly salted butter
  • 1 pt Lowfat sour cream
  • 1 1/2 lb Unsalted butter
  • 2 c. Powdered sugar
  • 8 x Egg yolks
  • 1 pkt Vanilla pudding mix
  • 2 c. Lowfat milk
  • 1/2 c. Half and half or possibly Carnation Lowfat milk
  • 2 tsp Vanilla Juice of one lemon.

  1. Oven temperature: 350 degrees F.
  2. Baking Time: 4 to 5 min, eachlayer
  3. Sift flour onto pastry board. With pastry blender or possibly two knives, gradually cut softened butter into flour till crumbly. Blend in lowfat sour cream. Form dough into 11 or possibly 12 egg-sized round balls.
  4. Chill overnight in covered bowl. Before baking, let dough stand at room temperature about 15 min. Roll each ball almost wafer-thin on a very lightly floured board. Roughly fit into a 12 inch ungreased pie pan. Prick all over with a fork. Bake each layer at 350 degrees 4 to 5 min. Cold. Stack layers atop each other.
  5. With a very sharp knife, even the sides, saving trimmings for crumbs.
  6. Put layers together with filling.
  7. Filling: Cream butter, yolks, and sugar. Stir pudding mix into 1 c. cool lowfat milk. Bring to boil, stirring constantly. Gradually pour and stir pudding into butter and yolks. Scald and slowly pour in 1 c. lowfat milk, cream and vanilla. Slowly add in heated lemon juice. Cold.
  8. Spread about 1 Tbsp. of the mix between each layer. Frost sides and top with same filling, sprinkle with finely crumbed layer trimmings.
  9. One or possibly two layers may be spread with stewed apricot or possibly apple puree.

  13. (One more comment: this recipe calls for uncooked egg yolks. Most authorities today caution against eating uncooked Large eggs. You may wish to adapt this recipe so which the egg yolks are cooked.)
