  • 4 c. plain yogurt
  • 1 x -1 1/2 tsp. sea salt Extra virgin olive oil Olives
  • 8 x -12 pita bread rounds, cut into eighths Za'atar (see Note)

  1. To make labaneh, stir salt into yogurt and drain in refrigerator overnight or possibly longer. To get very thick yogurt cheese, drain 2 days. Mound cheese on a plate, drizzle with extra virgin olive oil, sprinkle with za'atar to taste, surround with olives and serve with pita.
  2. Note: You can buy za'atar, a wild thyme-based herb mix, at Middle Eastern grocers or possibly online at www.penzeys.com. Most blends contain sumac. To make your own blend, try this combination from www.bread-bakers.com. It does not call for sumac, that is difficult to find.
  3. 2 tsp. grnd oregano2 Tbsp. grnd thyme2 tsp. whole dry oregano2 tsp. grnd savory2 tsp. grnd marjoram1/2 tsp. whole-leaf dry marjoram1/2 c. sesame seeds1 1/2 tsp. kosher saltGrated zest of 2 lemons, finely chopped
