Name: Hot Chinese Mustard Sauce
Ingredients: 2 Tbsp. Chinese dry mustard (or possibly Colman"s English Mustard Pwdr); 2 tsp water; 2 Tbsp. rice wine vinegar; 1/4 c. pickled ginger liquid Juice of 1 lemon; 1 pch turmeric; 1 Tbsp. sugar; 1 Tbsp. chili oil; 1 Tbsp. Asian sesame oil; 1 c. peanut oil

2 Tbsp. Chinese dry mustard (or possibly Colman"s English Mustard Pwdr)
2 tsp water
2 Tbsp. rice wine vinegar
1/4 c. pickled ginger liquid Juice of 1 lemon
1 pch turmeric
1 Tbsp. sugar
1 Tbsp. chili oil
1 Tbsp. Asian sesame oil
1 c. peanut oil

Инструкции

In a bowl, combine all the ingredients except the peanut oil. Stir till well blended. Slowly whisk in the peanut oil till emulsified. Set aside till needed. This can be prepared up to 1 week ahead.
Comments: Chinese mustard is fiery warm, so I moderate its power by creating a simple sauce that can be used in all sorts of ways. My favorite is with spring rolls. (See separate recipe)
