  • 1 1/4 lb Grnd Lamb
  • 3/4 c. Onion -- finely minced
  • 1/2 c. Parsely -- finely minced
  • 1/2 c. Cilantro -- finely minced
  • 4 x Cloves Garlic -- chopped or possibly Pressed
  • 3/4 tsp Salt
  • 1/2 tsp Grnd Black Pepper
  • 1/2 tsp Paprika
  • 1/2 tsp Cayenne Pepper
  • 12 x Bambo Skewers Extra virgin olive oil Hot Pita Bread
  • 1 c. Cilantro -- minced
  • 1 c. Parsley -- minced
  • 1/4 c. Red Serrano Chili Peppers -- Or possibly red jalapeno Chilies
  • 1/4 c. Water
  • 1/4 c. Extra virgin olive oil
  • 1 1/2 Tbsp. Garlic -- chopped or possibly pressed
  • 1 tsp Salt
  • 1 tsp Grnd Black Pepper
  • 1 tsp Grnd Cumin

  1. For Kebabs: Combine lam, onion, parsely, cilantro, garlic, salt, pepper, paprika and cayenne in large bowl and mix well. (Can be prepared 6 hrs ahead. Cover and chill). Place bamboo skewers in shallow dish and cove with cool water. Let stand at least 1 hour. Prepare barbecue
  2. (medium-high heat). Drain skewers. From generous 1/4 c. lamb into 3-inch long sausage around center of 1 bamboo skewer. Repeat with remaining mix and skewers. Brush lamb kebabs with oil.
