Ингредиенты

  • 1 Tbsp. extra virgin olive oil
  • 1 med white onion, diced
  • 4 x green onions, minced
  • 4 x cloves garlic, chopped
  • 1/2 lb very lean grnd pork
  • 8 x tomatillos, minced
  • 3 med New Mexico green chiles, roast, peel & dice
  • 1 Tbsp. minced fresh cilantro
  • 1 1/2 c. water
  • 1/2 c. white wine
  • 1/2 tsp grnd cumin
  • 1/4 tsp crushed oregano
  • 1 tsp freshly grnd black pepper
  • 1/2 tsp salt

Инструкции

  1. Heat the oil in a deep saute/fry pan and saute/fry the onion, green onions, garlic, and pork till the pork is browned through. Add in the rest of the ingredients except pepper and salt and cook over medium-high heat till it comes to a boil. Stir in the pepper and salt, reduce the heat, and simmer uncovered for 10 min.
  2. Yield: Approx. 4 c.
  3. SERVING SUGGESTIONS: Use over Large eggs Benedict instead of hollandaise sauce, or possibly with huevos rancheros. It's also outstanding spooned over warm white rice.
