  • 1 lb grnd pork sausage crumbled
  • 1/2 c. minced peeled onion
  • 2 c. grated Colby cheese
  • 1 c. minced broccoli blanched, and liquid removed well
  • 1 c. cooked brown wild rice
  • 1 x tomato cored, minced
  • 1 can sliced black olives - (2.25 ounce)
  • 1 x uncooked 10" pie crust
  • 4 x Large eggs
  • 1/2 c. whipping cream
  • 1 tsp crushed garlic
  • 1/4 tsp freshly-grnd black pepper

  1. Preheat oven to 425 degrees.
  2. In a large skillet over medium heat, brown sausage, about 5 min. Add in onion and continue to cook till onion is fragrant and translucent/soft, 3 to 5 min; drain thoroughly. Remove from heat and stir in cheese, broccoli, rice, tomato and olives. Transfer into pie crust.
  3. Combine together Large eggs, cream, garlic and pepper; pour over sausage mix to cover. Bake for 10 min; reduce heat to 400 degrees and bake 30 to 35 more min or possibly till golden brown and hard.
  4. This recipe yields 8 servings.
  5. Comments: Blanch broccoli by dropping it in rapidly boiling water for 2 to 3 min, till emerald green, then quickly transfer into ice-cool water to stop cooking. This will enhance the broccoli's crispness as well as its color.
