%20because%20I%20couldn%E2%80%99t%20take%20the%20time%20to%20make%20it%20right.%20There%20are%20meals%20and%20dishes%20I%20make%20when%20it%E2%80%99s%20just%20my%20husband%20and%20I%20that%20are%20amazing.%20I%20cook%20without%20concern,%20adding%20a%20sprinkle%20of%20this%20and%20that,%20never%20being%20able%20to%20replicate%20it%20again.%20I%20was%20testing%20a%20chicken%20tikka%20masala%20dish%20the%20other%20day%20that%20I%20choked%20up%20to%20a%20complete%20failure.%20I%20diligently%20took%20notes%20and%20photographed%20the%20steps%20until%20it%20was%20supposed%20to%20be%20finished,%20tasted%20and%20nearly%20cried.%20I%20kept%20adding%20things,%20cream,%20spice,%20tomato%20paste,%20completely%20forgetting%20to%20measure%20to%20record.%20The%20result%20was%20the%20most%20authentic%20tasting%20tikka%20masala%20any%20Polish%20girl%20could%20have%20pulled%20off.%20Without%20pressure%20I%20can%20do%20magic,%20but%20I%20have%20yet%20to%20do%20justice%20to%20a%20dish%20if%20family%20is%20around.%3C/p%3E%3Cp%3EI%20had%20big%20plans%20for%20Easter%E2%80%93berry%20cupcakes%20without%20the%20berries.%20Strawberries%20brings%20cravings%20for%20strawberries%20and%20other%20berries%20not%20far%20behind.%20Something%20you%E2%80%99re%20not%20going%20to%20see%20in%20New%20York%20for%20another%20few%20months.%20And%20I%20needed%20to%20stick%20to%20my%20locavore%20lifestyle.%20I%20did%20have%20some%20berry%20jams,%20still%20left%20over%20from%20last%20spring,%20some%20raspberry%20liqueur%20and%20beer.%20I%20played%20with%20a%20few%20variations%E2%80%93lemon%20cake%20filled%20with%20strawberry%20jam,%20raspberry%20liqueur%20cake%20with%20lemon%20cream%20filling,%20raspberry%20wheat%20cupcakes%20filled%20with%20raspberry%20jam.%20They%20were%20good,%20but%20not%20the%20bursting%20berry%20flavor%20that%20I%20had%20in%20mind.%20As%20Easter%20got%20closer,%20with%20no%20better%20plan%20in%20mind,%20I%20opted%20for%20a%20traditional%20carrot%20cake.%20Really,%20how%20hard%20could%20it%20be.%3C/p%3E%3Cp%3EThe%20challenge%20with%20carrot%20cake%20is%20while%20I%E2%80%99ve%20made%20it%20a%20million%20times%20(cake%20and%20cupcake%20form)%20I%E2%80%99ve%20never%20really%20stuck%20to%20a%20recipe.%20This%20time,%20I%20opted%20to%20use%20a%20recipe%20from%20Smitten%20Kitchen.%20Deb%20has%20never%20really%20let%20me%20down%20before%20so%20I%20figured%20it%20was%20a%20sure%20thing.%20For%20icing%20I%20stuck%20with%20a%20pretty%20basic%20cream%20cheese%20icing%20but%20added%20a%20vanilla%20bean%20to%20get%20those%20beautiful%20black%20flecks%20in%20the%20icing.%3C/p%3E%3Cp%3ECream%20cheese%20icing%20is%20something%20I%20could%20normally%20do%20in%20my%20sleep,%20but%20again,%20family.%20I%20decided%20to%20make%20the%20icing%20at%20home%20the%20night%20before%20(nothing%20out%20of%20the%20ordinary)%20and%20transport%20it%20with%20me%20to%20New%20Jersey.%20The%20thing%20about%20having%20a%20stand%20mixer%20is%20it%20makes%20you%20lazy.%20I%20remember%20those%20days%20when%20I%20used%20to%20stand%20for%2020%20minutes%20at%20least%20whipping%20the%20perfect%20icing%20with%20a%20handheld%20mixer.%20Nope.%20Not%20anymore.%20The%20icing%20seemed%20fine%20when%20I%20left%20Brooklyn,%20but%20either%20during%20its%20journey%20to%20New%20Jersey%20or%20through%20a%20disagreement%20with%20my%20mom%E2%80%99s%20refrigerator,%20it%20got%20soft.%20I%20mean%20really%20soft.%20I%20mostly%20blame%20the%20fridge%20because%20I%20had%20whipped%20up%20some%20luscious%20cream,%20go%20to%20on%20the%20scones%20I%20made%20(my%20only%20Easter%20success),%20stuck%20it%20in%20the%20fridge,%20and%20hours%20later%20ended%20up%20with%20a%20white%20puddle.%20So%20I%20don%E2%80%99t%20think%20the%20icing%20failure%20is%20completely%20my%20fault.%3C/p%3E%3Cp%3ESo%20I%20ended%20up%20with%20the%20perfect%20carrot%20cake,%20only%20with%20oozy%20gooey%20icing,%20rather%20than%20light%20and%20fluffy.%20But%20really%20it%E2%80%99s%20the%20taste%20that%20matters.%20And%20luckily,%20as%20much%20pressure%20as%20family%20might%20put%20on%20you,%20or%20doesn%E2%80%99t,%20they%20love%20you%20anyway,%20even%20if%20you%20don%E2%80%99t%20always%20present%20the%20perfect%20dessert%E2%80%93as%20long%20as%20there%20IS%20a%20dessert.%3C/p%3E%3Cp%3ECarrot%20Cake%20with%20Cream%20Cheese%20Icing%20(Adapted%20from%20Smitten%20Kitchen)%3C/p%3E%3Cp%3EFOR%20THE%20CAKE%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%C2%B0F.%20Line%20bottom%20of%202%209-inch%20cake%20pans%20with%20parchment%20paper.%20Butter%20and%20flour.%20Tap%20off%20any%20excess.%20Whisk%20flour,%20baking%20soda,%20salt,%20cinnamon,%20nutmeg%20and%20ginger%20in%20medium%20bowl%20to%20blend.%20Whisk%20sugar%20and%20oil%20in%20large%20bowl%20until%20well%20blended.%20Whisk%20in%20eggs%201%20at%20a%20time.%3C/p%3E%3Cp%3EAdd%20flour%20mixture%20and%20stir%20until%20blended.%20Stir%20in%20carrots,%20walnuts%20and%20raisins.%20Divide%20the%20batter%20between%20the%20prepared%20pans,%20and%20bake%20the%20layers%20for%20about%2040%20minutes%20ea
