%3C/p%3E%3Cp%3ENow,%20on%20to%20the%20cookies...here%20is%20the%20post%20I%20received%20from%20Ginny.%20Enjoy!%3C/p%3E%3Cp%3EOkay,%20so%20I'm%20intrigued%20by%20Bacon.%20The%20current%20movement%20of%20using%20bacon%20in%20everything%20borders%20on%20insane.%20(Bacon%20salt,%20Bacon%20Mayo,%20Bacon%20Vodka...)%20There%20are%20just%20some%20things%20that%20ruin%20Bacon.%20That%20being%20said,%20I%20decided%20to%20try%20these,%20because%20as%20I%20said,%20I'm%20intrigued.%3C/p%3E%3Cp%3EFirst,%20there%20isn't%20a%20lot%20of%20sugar%20in%20these.%20When%20I%20made%20the%20dough,%20it%20made%20me%20think%20of%20shortbread.%20Very%20dry,%20mostly%20fat%20and%20flour.%20Second,%20it%20seemed%20fairly%20straight-forward.%20I%20used%20a%20pastry%20cutter%20to%20mix%20the%20ingredients%20together%20and%20it%20worked%20very%20well.%20There%20wasn't%20much%20need%20to%20knead,%20Ha!%20I%20just%20had%20to%20form%20it%20into%20the%20log%20shape.%20The%20most%20complicated%20part%20of%20the%20recipe%20was%20getting%20the%20fine%20chop%20on%20the%20bacon,%20in%20retrospect%20I%20should%20have%20just%20given%20it%20a%20whirl%20in%20the%20food%20processor.%20I%20had%20bacon%20bits%20flying%20everywhere.%20I'm%20sure%20that%20the%20cat%20will%20find%20them...%3C/p%3E%3Cp%3EThe%20final%20results,%20I%20liked%20them.%20I%20used%20a%20double%20smoked%20variety%20of%20bacon%20and%20it%20almost%20seemed%20that%20the%20maple%20syrup%20overwhelmed%20the%20cookie.%20You%20almost%20wouldn't%20know%20the%20bacon%20was%20there.%20I%20found%20that%20I%20liked%20the%20cookie%20better%20with%20less%20frosting,%20and%20that%20is%20not%20typical%20for%20me.%20As%20much%20as%20I%20like%20bacon,%20I%20like%20frosting%20too,%20so%20it%20was%20a%20little%20surprising%20to%20me.%20Without%20the%20frosting%20they%20were%20like%20a%20lightly%20sweet%20bacon%20shortbread%20biscuit.%3C/p%3E%3Cp%3EAt%20this%20point%20Beth%20is%20saying%20DUH!%20because%20she%20recalls%20me%20telling%20her%20that%20I%20am%20not%20that%20fond%20of%20maple%20flavored%20pork%20products%20and%20that%20I%20prefer%20that%20the%20maple%20syrup%20from%20my%20pancakes%20not%20touch%20my%20sausage%20or%20bacon.%20(Yep,%20its%20true,%20that%20is%20one%20thing%20Ginny%20and%20I%20disagree%20on.%20I%20love%20to%20dip%20my%20breakfast%20meat%20in%20my%20maple%20syrup,%20but%20the%20very%20idea%20of%20it%20grosses%20Ginny%20out,%20which%20is%20why%20I%20was%20a%20tad%20surprised%20when%20she%20decided%20to%20make%20these%20cookies)%20If%20you%20enjoy%20that%20sort%20of%20thing,%20these%20may%20be%20right%20up%20your%20alley.%3C/p%3E%3Cp%3EFry%20the%20bacon%20over%20medium%20heat%20until%20crisp%20and%20then%20drain%20on%20paper%20towels.%20In%20a%20mixing%20bowl,%20combine%20the%20flour,%20butter,%20egg,%20and%20cream%20and%20mix%20until%20well-blended.%20Add%20the%20bacon%20and%20knead%20until%20the%20dough%20is%20soft%20and%20the%20bacon%20is%20evenly%20distributed,%20about%201%20minute.%20Roll%20the%20dough%20into%20one%20or%20two%20logs%20about%201%201/2%20inches%20thick.%20Wrap%20in%20plastic%20wrap%20and%20chill%20until%20firm,%20at%20least%202%20hours.%20Preheat%20the%20oven%20to%20350%20degrees%20Fahrenheit.%3C/p%3E%3Cp%3ECut%20the%20dough%20into%201/4-inch%20thick%20slices%20and%20arrange%20the%20slices%20about%201%20inch%20apart%20on%20a%20lightly%20greased%20cookie%20sheet%20(use%20a%20bit%20of%20the%20bacon%20grease%20or%20use%20a%20silicone%20mat).Bake%20until%20the%20cookies%20are%20firm%20and%20very%20lightly%20browned%20(they%20won%E2%80%99t%20get%20golden%20brown),%20about%2012-15%20minutes.Transfer%20the%20cookies%20to%20a%20rack%20to%20cool.Then,%20spread%20with%20maple%20icing%20and%20top%20with%20a%20small%20piece%20of%20candied%20bacon%20(recipes%20below).Maple%20Icing%3C/p%3E%3Cp%3EMix%20a%201/2%20cup%20of%20powdered%20sugar%20with%20about%203%20tablespoons%20of%20Grade%20B%20real%20maple%20syrup%20(add%20a%20bit%20more%20sugar,%20then%20a%20bit%20more%20syrup%20until%20the%20consistency%20is%20spreadable).%20Ice%20the%20cookies%20when%20they%20are%20cool.%3C/p%3E%3Cp%3ECandied%20Bacon,%20aka%20Pig%20Candy%20(optional)%3C/p%3E%3Cp%3ELay%20several%20slices%20of%20maple%20bacon%20on%20a%20silicone-lined%20sheet%20pan.%20Coat%20each%20bacon%20slice%20with%20light%20brown%20sugar.%20Bake%20at%20350%20degrees%20until%20the%20bacon%20is%20crisp,%20about%2025%20minutes.%20The%20bacon%20will%20turn%20a%20deep%20mahogany%20color;%20don%E2%80%99t%20be%20alarmed.%20When%20it%E2%80%99s%20crisp,%20let%20it%20cool%20on%20the%20rack.%20Then,%20cut%20it%20into%20small%20pieces%20to%20put%20on%20top%20of%20the%20iced%20cookies.%3C/p%3E%3Cp%3E~ginny%3C/p%3E%3Cp%3EHere's%20a%20quick%20update%20from%20Ginny%20after%20she%20took%20the%20cookies%20in%20to%20her%20guinea%20pigs,%20I%20mean%20-%20CO-WORKERS!%3C/p%3E%3Cp%3ETook%20these%20to%20work%20and%20yes,%20people%20gave%20me%20the%20funny%20look%20when%20I%20said%20bacon%20cookies.%20That%20being%20said,%20I%20didn't%20have%20one%20person%20say%20they%20didn't%20like%20them.%20Most%20thought%20they%20were%20really%20good,%20the%20mildest%20reaction%20I%20got%20was%20%22Interesting%22.%20Not%20one%20yuck%20in%20the%20bunch.%20:-)%20Most%20said%20they%20wouldn't%20have%20known%20there%20was%20bacon%20in%20them%20if%20I%20hadn't%20told%20them.%20I%20even%20tested%20it%20and%20gave%20some%20to%20people%20without%20telling%20them%20and%20they%20couldn't%20pick%20out%20the%20secret%20ingredient.%20Next%20time...%20more%20bacon,%20less%20frosting!%3C/p%3E%3Cp%3EOk,%20folks,%20on%20that%20note,%20I%E2%80%99m%20off%20to%20go%20fry%20some%20bacon!%20Be%20on%20the%20lookout%20for%20another%20VERY%20bacon-related%20post%20sometime%20early%20next%20week.%20I%20have%20a%20very%20pork-fat-friendly%20surprise%20in%20store%20for%20the%20hubs%20for%20Fathers%20Day!%3C/p%3E){kind=link}
