Ингредиенты

  • 2 med Eggplants
  • 2 Tbsp. Tahini
  • 2 x Garlic cloves, pressed Juice of 1 lemon
  • 2 Tbsp. Minced fresh parsley (opt)
  • 1/2 tsp Salt Black pepper to taste

Инструкции

  1. Preheat oven to 300'F. Pierce eggplant with a fork and bake whole till eggplant begins to deflate (about 40 min). Let cold and scoop out insides and mash with a fork. Add in remaining ingredients and mix well.
  2. Makes4-6 sandwiches or possibly serves 6-8 as a dip.
