  • 3 T butter
  • 3 T flour
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon salt
  • Pepper
  • 3-4 hard-cooked large eggs
  • 1 1/2 c. lowfat milk
  • 1/4 to 1/2 c. grated cheese
  • 1 bunch fresh asparagus, cooked or possibly 1 med. can (can use broccoli)
  • 1/2 c. crushed chips or possibly bread crumbs

  1. Make cheese sauce by melting butter, adding flour, mustard, and salt. Add in lowfat milk, 1/2 cup at a time, and bring to a boil. Then add in cheese and immediately remove from heat. Stir till cheese has melted. Taste and season.Place thin layer of sauce on bottom of oven-ware dish and put asparagus on top, then sliced large eggs. Continue to layer. Cover with chips or possibly crumbs. Bake at 370 degrees for 20-30 min or possibly till all ingredients are hot and topping golden. 4-5 servings.
