%3C/p%3E%3Cp%3ECaprese%20Salad%20with%20our%20special%20Italian%20Extra%20Virgin%20Olive%20Oil,%20a%20gift%20from%20Italy%3C/p%3E%3Cp%3ENearly%20a%20year%20ago,%20my%20MIL%20%20went%20to%20Italy%20for%20a%20glorious,%20unparalleled%20vacation%20that%20took%20her%20over%20several%20parts%20of%20the%20country%20and%20left%20us%20jealously%20seething%20back%20here%20in%20the%20States.%20%20She%20brought%20us%20back%20this%20delightful,%20tiny%20bottle%20of%20olive%20oil%20that%20we%E2%80%99ve%20only%20used%20to%20dress%20the%20simplest%20of%20ingredients,%20but%20it%20feels%20right%20to%20finally%20highlight%20in%20one%20of%20our%20posts%E2%80%93especially%20when%20we%20found%20some%20amazing%20vine-ripened%20tomatoes%20and%20Fairway%E2%80%99s%20unsurpassed%20salted%20fresh%20mozzarella%20to%20use%20as%20the%20featured%20stars.%20%20It%20seemed%20strange%20to%20get%20tomatoes%20in%20February%20because%20normally%20the%20tomatoes%20available%20are%20pretty%20terrible,%20but%20in%20our%20defense%E2%80%93the%20ones%20we%20purchased%20legitimately%20smelled%20like%20tomatoes.%20%20%20The%20original%20plan%20was%20to%20oven-roast%20them,%20but%20alas%E2%80%93time%20slipped%20away.%20%20So%20we%20worked%20with%20what%20we%20had%E2%80%93and%20any%20defects%20that%20the%20tomatoes%20had%20were%20more%20than%20masked%20by%20the%20delicious%20cheese.%3C/p%3E%3Cp%3EMmmm.%20%20Cheese.%3C/p%3E%3Cp%3EMaine%20Mussels%20Steamed%20in%20Victory%20Beer's%20Golden%20Monkey%20with%20Garlic%20and%20Shallots%3C/p%3E%3Cp%3EAfter%20we%20indulged%20in%20a%20few%20of%20those%20babies,%20it%20was%20time%20for%20the%20main%20event:%20%20mussels,%20mussels,%20mussels.%20%20After%20committing%20mussel-cide%20a%20few%20months%20ago%20via%20suffocation,%20I%E2%80%99m%20now%20officially%20paranoid%20when%20it%20comes%20to%20bringing%20mussels%20home%20while%20keeping%20them%20alive.%20%20It%E2%80%99s%20times%20like%20these%20that%20make%20me%20miss%20Number%201%20Fish%20Market%20in%20New%20Haven,%20because%20my%20mussels%20would%20come%20in%20a%20paper%20bag%20and%20they%20would%20be%20in%20our%20apartment%20in%20less%20than%20ten%20minutes,%20but%20it%E2%80%99s%20all%20about%20adjusting%20to%20new%20locations,%20right?%3C/p%3E%3Cp%3EMaine%20Mussels%20Steamed%20in%20Victory%20Beer's%20Golden%20Monkey%20with%20Garlic%20and%20Shallots...posing%20with%20the%20beer.%3C/p%3E%3Cp%3EThis%20is%20a%20recipe%20worth%20taking%20the%20risk%20in%20buying%20these%20mollusks,%20because%20it%20represents%20all%20that%20can%20be%20fantastic%20about%20great%20food,%20much%20less%20great%20bar%20food:%20%20a%20platter%20of%20shellfish,%20copious%20amounts%20of%20broth,%20and%20a%20bowl%20of%20bread%20to%20sop%20up%20all%20of%20the%20garlicky,%20shallot-y%20goodness%E2%80%93not%20to%20mention%20all%20of%20the%20complex%20flavors%20that%20came%20to%20the%20party%20courtesy%20of%20one%20of%20my%20favorite%20beers,%20Victory%E2%80%99s%20Golden%20Monkey.%3C/p%3E%3Cp%3EI%20have%20an%20affectionate,%20not-quite-appropriate%20nickname%20for%20this%20beer%E2%80%93let%E2%80%99s%20just%20say%20that%20it%E2%80%99s%20a%20beer%20that%20is%20intense%20and%20will%20make%20you%20loopy%20and%20therefore%20must%20be%20imbibed%20with%20discretion.%20%20%20In%20any%20case,%20the%20second%20I%20saw%20a%20Golden%20Monkey%20mussel%20dish%20on%20the%20brewery%E2%80%99s%20menu%20the%20last%20time%20we%20were%20in%20town,%20I%20knew%20that%20I%20had%20to%20try%20it%20at%20home,%20since%20home%20was%20nowhere%20near%20the%20brewhouse%20or%20Pennsylvania.%20%20(Note:%20%20Victory%20Beer%20is%20easy%20to%20find%20in%20our%20city,%20but%20I%20suggest%20using%20this%20Beerfinder%20to%20find%20the%20closest%20retailer%20near%20you)%3C/p%3E%3Cp%3ESteamed%20mussels%20aren%E2%80%99t%20tough%20to%20do%E2%80%93they%20need%20some%20simple%20aromatics%20such%20as%20shallots%20and%20garlic,%20and%20a%20good%20alcohol-based%20brew%20that%20will%20infuse%20flavor%20into%20the%20shellfish,%20which%20are%20all%20you%20need%20to%20make%20these%20delightful%20delicacies.%20%20It%E2%80%99s%20ideal%20to%20have%20a%20great%20loaf%20of%20bread%20to%20sop%20up%20the%20sauce%20that%20comes%20as%20a%20result%20of%20making%20these%20lovelies,%20but%20I%20managed%20to%20make%20another%20dish%20by%20bringing%20the%20contents%20to%20a%20boil,%20adding%20some%20couscous%20(measuring%20everything%20beforehand,%20I%20assure%20you),%20and%20voila%E2%80%93lunch%20for%20the%20next%20day%20or%20two.%3C/p%3E%3Cp%3EThis%20is%20a%20recipe%20that%20is%20perfect%20for%20those%20days%20that%20you%20long%20for%20a%20good%20bar%20meal,%20but%20you%20don%E2%80%99t%20live%20within%20walking%20distance%20of%20a%20watering%20hole.%3C/p%3E%3Cp%3EGolden%20Monkey%20Mussels%3C/p%3E%3Cp%3Eadapted%20from%20Victory%E2%80%99s%20website,%20serves%202%20as%20an%20entr%C3%A9e%3C/p%3E%3Cp%3EWarm%20the%20butter%20in%20a%20sturdy%20pot%20and%20saute%20shallots%20and%20garlic%20until%20translucent%20and%20tender.%20%20Add%20the%20red%20pepper%20flakes%20and%20mussels,%20and%20then%20cover%20them%20all%20with%20the%20beer%20and%20season%20with%20salt%20and%20pepper.%20%20Raise%20the%20heat%20to%20high,%20cover%20the%20pan%20and%20let%20steam%20for%20about%205-8%20minutes,%20or%20until%20the%20mussels%20all%20open.%20%20Place%20into%20a%20large%20serving%20dish%20and%20serve%20with%20bread.%3C/p%3E){kind=link}
