I received a kidney transplant in June, so I have been able to change my diet a little. I am still trying to avoid too much salt in my food, and eat as healthy as possible as well. My family and I are focusing on saving money with fixing meals that are made with local ingredients. Since we live in Southeast Kansas, that leaves out the seafood, and other costly items. Good old fashioned home-cooking is what I like to cook!!! (With healthy tweaks, of course!)
