- Chop walnuts coarse. Beat large eggs; add in sugar, then oil. Put together dry ingredients. Add in to first mix alternately with zucchini. Stir in raisins, nuts, and vanilla. Bake in 2 greased and floured loaf pans.Bake on lowest rack at 350 degrees for 55 min. Let stand about 20 min. Turn onto a wire rack to cool. Can be lightly glazed with powdered sugar or possibly iced with cream cheese frosting.
- Use 2 cups pumpkin in place of the zucchini and omit raisins for pumpkin bread.
