Two weeks of cold and rain has not done wonders for my garden.

It seems that compromise is not in the weather picture this year.

On Wednesday I had a garden full of green tomatoes, just waiting for the sun to ripen.

On Thursday they gave up, the plants turned brown and the tomatoes are turning ugly.

As to the rest of the plants, the butternut and acorn squashes, the green beans, the zucchini…..

I’m waiting to see if they come back or die.

Only the Rainbow Chard seems happy.

I still have some decent tomatoes ripening on my counter, and I managed to pick a zucchini big enough to make these timbales.

Zucchini Timbales with Basil and Tomato

Total time: 40 minutes

Ingredients:

Instructions:

Lightly oil the bottom and sides of the ramekins.

Whisk together egg, mustard and yogurt.

Add zucchini and mix well.

Place one slice tomato on the bottom of each ramekin.

Sprinkle with paprika

Spoon 1/4th of the zucchini mixture on top of each tomato.

Arrange the basil leaves, overlapping, on the zucchini.

Lay the mozzarella on the basil.

Top with remaining zucchini mixture.

Put ramekins on a baking sheet and into a pre-heated 400F (200C) oven

Bake 25 – 30 minutes, until set.

Remove and slide a knife around the sides to loosen.

Invert on to the plates

Garnish with basil leaves and serve.

Once again I used cheap mozzarella in this…. Because I still had some.

If you use good mozzarella or Mozzarella di Bufala, there may be ‘water’. Just soak it up with a paper towel before serving.

I am currently in a no-win discussion with mon mari.

You may or may not recall that this is the time of year when the really, really, really big male house spiders are on the prowl for a little action.

The discussion I’m having with mon mari came about this way:

It was late at night, when all the very biggest and bestest spiders are out and about, and I was upstairs, getting ready for bed.

Mon mari was just coming up the stairs.

I turned my head (likely because I saw something horrible out of the corner of my eye) and there, mere inches from my person, was a gigantic spider.

I screamed (mon mari says I yelp), I jumped back, screamed again and ran out of the room.

He would like me not to do that…..

The screaming part.

I tried to explain that it’s an involuntary reaction and I can’t help it, stop it or control it.

I don’t see a spider, pause to consider my options, decide to jump and scream, then proceed to jump and scream.

That’s just not how it works.

I’m across the room, and have executed several screams, before my brain actually registers ‘spider’.

That was two nights ago.

Last night he was in the bedroom when I went into the bathroom.

I nudged the door open and checked all the walls and ceiling I could see. I took a step in and looked behind the door and under the cabinets. I took another step, completed my inspection, then closed the door and brushed my teeth.

He asked me why I did that.

I have no idea what happened to the man I have lived with for years, but the person asking me that question apparently does not know me at all.

I was checking for spiders!!!!!

If I’m looking for them and I see them I don’t scream. It’s only when I’m startled that I scream.

Okay, when I’m looking for them and find them, I may not scream, but I do demand that they be dealt with immediately in what some might call an authoritative voice.

But I don’t scream.

And I never yelp.
