Ok zucchini... what the heck do you do with zucchini? I am a veggie lover, but I have to say, zucchini is rather tasteless and blah. So why do I grow it in my garden? And why do I grow it in such mass quantity? What can I say, it's satisfying to watch something grow so heartily; now I have to figure out what the heck to do with it all. I mean, there is only so much zucchini bread one person can eat, and the neighbors have locked their doors when they see me strolling up the driveway with a bag full of the green stuff.

This recipe though, oh this recipe! It solves the dilemma! It actually gives zucchini more purpose and... wait for it... flavor!! I am so in love with this recipe I think I'll make it all summer long with all my giant zucchini, for everyone that comes over. You should too.

In a medium pot or sautee pan, heat some oil and sautee the onion for about 2 minutes. Then add the garlic and sautee for another 2 minutes.

Add the chili pepper and chopped mushrooms, mix to incorporate and let cook for about 5 minutes.

Add in your fake meat by 'piecing' little bits off the main log. Note: it's a sticky log which is why you want to 'piece' your half up into bits.

Love this stuff! No meat lover could deny it!

Mix to incorporate and while it cooks, continue to break up your 'meat' pieces into smaller chunks. As it warms it will be easier to do.

Add soyrizo and continue to cook for about 5 minutes then turn off the stove.

While your mix is cooking, slice the zucchini lengthwise and use a spoon to carefully scoop the middle out. It doesn't take too much force. Make sure to leave space on the sides and bottom so they don't fall apart when bbq'd.

When zucchini is ready, scoop the mix into each hollowed out middle. Pack it down as you go so you get a lot of mix.

Pop on the grill for about 10 - 15 minutes.
