Zucchini and Onions
- 3 tbs olive oil
- 1 large or 2 medium onions, diced
- 4-5 zucchini, peeled, seeded and cut into 3/4 cm rounds
- salt
- pepper
In a deep pan, heat oil on medium and fry onions until translucent.
Add salt, pepper and zucchini.
Cover and let simmer, stirring every couple of minutes until zucchini is soft.
Note: if mixture get too dry, add water.
