%20with%20Chestnut%20Breadcrumbs%3C/p%3E%3Cp%3ELovely%20weekend%20walk%20,%20bright%20and%20sunny%20autumn%20sunshine%20and%20in%20the%20middle%20of%20the%20pasture%20%20a%20troop%20of%20Fields%20Blewits.%3C/p%3E%3Cp%3EA%20couple%20of%20years%20ago%20I%20picked%20up%20a%201970s%20edition%20of%20Jane%20Grigson%E2%80%99s%20Mushroom%20Feast%20in%20which%20Jane%20claims%20claims%20that%20both%20Blewits%20and%20my%20%20other%20favourite%20British%20Mushroom%20%20St%20George%E2%80%99s%20are%20overated.%20%20Given%20this%20dismissal%20Jane%20therefore%20declines%20to%20provide%20any%20guidance%20on%20their%20collection%20,%20identification%20or%20cookery.%3C/p%3E%3Cp%3EI%20don%E2%80%99t%20know%20if%20the%20re-published%202007%20version%20has%20the%20same%20deliberate%20omission%20but%20it%20seems%20unfair%20particularly%20for%20a%20mushrooms%20that%20is%20so%20prolific%20in%20autumn%20and%20easily%20identified%20.Luckily%20Roger%20Phllips%20my%20other%20mushroom%20guru%20is%20more%20positive%20on%20%20Lepista%20saeva%20describing%20it%20excellent%20and%20pairing%20it%20with%20chicken%20in%20a%20pie%3C/p%3E%3Cp%3EIn%20fact%20the%20%20Midlands%20agreed%20with%20Roger%20at%20this%20time%20of%20year%20all%20the%20small%20vegetable%20stalls%20stock%20what%20they%20call%20Blue%20Legs%20in%20the%20autumn%20Field%20Blewits%20unlike%20their%20iridescent%20woodlands%20relatives%20only%20have%20a%20small%20amount%20of%20blue%20on%20them.%20On%20the%20wholly%20white%20mushroom%20you%20can%20see%20what%20look%20like%20%20blue%20biro%20marks%20scraped%20along%20the%20side%20of%20the%20stem.%3C/p%3E%3Cp%3EWhen%20picking%20all%20mushrooms%20use%20a%20knife%20to%20cut%20the%20mushrooms%20stem%20rather%20than%20pulling%20the%20whole%20thing%20up%20,%20this%20preserves%20the%20mycelium%20which%20assures%20the%20mushrooms%20will%20return%20next%20year,%20it%E2%80%99s%20also%20worth%20using%20a%20brush%20to%20brush%20off%20any%20leaf%20mould,%20grasses%20and%20to%20spread%20spores.%20(%20I%20have%20just%20updated%20my%20Feminine%20Foraging%20Tips%20)%3C/p%3E%3Cp%3EI%20love%20mushrooms%20on%20toast%20it%E2%80%99s%20a%20classic%20,%20earthy%20garlicky%20juices%20soaking%20into%20the%20crunchy%20toast%20.%20%20But%20the%20appropriate%20toast%20to%20mushroom%20quotient%20is%20sometimes%20hard%20to%20achieve.%20In%20this%20descontructed%20version%20large%20slices%20of%20mushroom%20%20are%20tumbled%20with%20crunchy%20breadcrumbs%20and%20seasonal%20chestnuts%20%20ensuring%20hit%20of%20mushroom%20in%20each%20mouthful%20.%3C/p%3E%3Cp%3EYou%20could%20add%20some%20spinach%20or%20other%20flavours%20to%20the%20breadcrumbs,%20tinned%20anchovies%20or%20chillis%20but%20when%20%20using%20such%20delicious%20wild%20mushrooms%20its%20nice%20to%20keep%20things%20simple.%3C/p%3E%3Cp%3EFry%20the%20garlic%20and%20rosemary%20in%20the%20butter,%20add%20the%20mushrooms%20cook%20for%20a%20few%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20breadcrumbs%20to%20the%20pan%20and%20mix%20well%3C/p%3E%3Cp%3EServe%3C/p%3E%3Cp%3EThis%20entry%20was%20posted%20in%20Uncategorized.%20Bookmark%20the%20permalink.%3C/p%3E){kind=link}
