This morning I woke up bright and early at 6:15 in a great mood! Why is it that I can never sleep in on my days off, but when I have to get up early to make it to the gym before work I feel like I could sleep for hours?!

I have a busy day planned for today, which includes assignments in each of my classes…

Hello big mountain of books.

But with the extra time this morning, I decided to get fancy for breakfast and make pancakes!

Wholesome Chow contacted me right after I got back from California, and asked if I would like to review two of their gluten free mixes. I can’t believe I’m just getting around to it!

Product Review- Wholesome Chow Gluten Free All Purpose & Pancake Mix

I decided for my first batch, I would follow the instructions perfectly:

instead of adding chia, oats, or protein powder. (this was a mistake)

The mix was easy to make, and I was excited it didn’t call for eggs, because we’re out!

In to the skillet they went, until bubbly…

and then FLIP!

I made myself a stack of 4 pancakes, topped with two strawberries from my own yard!

One tablespoon of Grade B maple syrup on the side for occasional dips!

These pancakes had what every perfect stack should have – crisp edges and a doughy center. YUM!

The flavor was great. I didn’t taste the Apple Cider Vinegar, and since I added 1 tsp. of vanilla to the batter, there was a slight hint of funnel cake!

The texture was good. Doughy and chewy.

But here’s my one complaint.

I ate these pancakes at 8:15, and now three hours later, I am STARVING!!!!

AND I haven’t even been to the gym yet! Granted I’ve been knocking out school work, and using the ol’ noggin, but dang! I should have beefed up the batter with chia and oats and protein.

OR I should have topped these babies with yogurt. There just wasn’t enough protein to hold me over. I like my breakfast to leave me a little bit hungry by 11:30, so I have my snack, and then hold me over until lunch at 1pm. Being this hungry at 11:15 makes me want to eat a giant pile of french fries! (Which thankfully we don’t have at our house!)

But overall, I would definitely recommend this mix. They were very yummy gluten free pancakes, and if you can’t do corn then you’re in luck! They’re corn free too! And if you can’t do dairy, then you can use a milk substitute. Yay!

Alright, back to school work. I’m working on a discussion question: If I were an Indian in North America between 15,000 years ago and AD 1500, would I have rather been a hunter-gatherer or a farmer?

Tough question. But I definitely would have been gluten free!
