,%20from%20a%20food%20standard%20point%20of%20view,%20it%20is%20%22unprocessed'.%3C/p%3E%3Cp%3ENow%20let's%20talk%20bread!%20Sourdough%20bread%20comes%20from%20a%20sourdough%20starter,%20also%20known%20as%20wild%20yeast.%20It%20doesn't%20like%20to%20be%20kneaded%20so%20basically%20all%20sourdough%20breads%20are%20no-knead.%20They're%20also%20slow%20rising.%3C/p%3E%3Cp%3EIf%20you%20want%20to%20make%20your%20own%20sourdough%20starter%20(it%20really%20is%20fun%20and%20if%20you%20have%20kids,%20the%20process%20could%20be%20fun%20for%20them%20too),%20here's%20a%20link%20to%20my%20post%20about%20how%20to%20make%20your%20own%20Sourdough%20Starter.%3C/p%3E%3Cp%3EThis%20loaf%20of%20bread%20almost%20became%20just%20a%20sourdough%20whole%20wheat%20bread.%20I%20couldn't%20find%20anything%20that%20said%20%22whole%20grain%22%20on%20the%20shelves%20with%20all%20the%20flours.%20So%20I%20went%20to%20the%20bulk%20bin%20section%20(I%20love%20stores%20that%20sell%20things%20in%20bulk%20out%20of%20bins!)%20and%20found%20some%20wheat%20berries.%20Now%20I%20was%20excited!!!%20Not%20that%20I%20have%20a%20grain%20mill%20or%20anything...but%20I%20do%20have%20a%20food%20processor.%20And%20it%20worked%20just%20fine%20for%20my%20purposes.%20It%20didn't%20grind%20it%20down%20as%20smoothly%20as%20a%20grain%20mill%20would,%20but%20I%20love%20the%20texture%20that%20I%20ended%20up%20with.%3C/p%3E%3Cp%3EOf%20course,%20if%20you%20don't%20want%20to%20go%20through%20this%20or%20you%20can't%20find%20wheat%20berries,%20just%20use%20all%20whole%20wheat%20flour%20instead.%3C/p%3E%3Cp%3EAnother%20optional%20addition%20for%20this%20bread%20is%20adding%20Vital%20Wheat%20Gluten.%20Although%20it%20is%20processed%20it%20could%20be%20an%20exception%20that%20you%20allow%20in%20order%20to%20have%20a%20lighter%20loaf%20of%20bread.%20I%20made%20one%20loaf%20without%20and%20one%20with%20it.%20There%20was%20a%20difference%20in%20the%20crumb%20of%20course....the%20vital%20wheat%20gluten%20created%20a%20crumb%20that%20wasn't%20as%20dense,%20which%20might%20be%20preferable%20for%20sandwiches.%20The%20flavor%20was%20the%20same%20in%20both.%20I%20will%20include%20it%20in%20the%20ingredients.%20You%20choose%20whether%20or%20not%20you%20want%20to%20add%20it.%20Pictured%20is%20the%20loaf%20with%20vital%20wheat%20gluten%20added.%3C/p%3E%3Cp%3ENote:%20If%20you%20grind%20any%20grains%20for%20your%20bread,%20I%20highly%20recommend%20weighing%20the%20flours%20rather%20than%20using%20a%20measuring%20cup.%20Flour%20from%20a%20bag%20has%20settled%20and%20will%20be%20more%20%22packed%22%20when%20measuring%20as%20opposed%20to%20freshly%20ground%20flours%20which%20have%20a%20lot%20more%20air%20fluff%20to%20them.%20This%20will%20result%20in%20an%20inaccurate%20measuring%20when%20using%20measuring%20cups.%20As%20a%20guide,%201%20cup%20of%20whole%20wheat%20flour%20weighs%20130%20grams%20or%205%20oz.%20This%20loaf%20of%20bread%20contains%20a%20total%20or%20455%20grams%20of%20flour.%20(various%20kinds%20of%20flours%20have%20a%20different%20weight)%3C/p%3E%3Cp%3EWhole%20Grain,%20No-Knead%20Sourdough%20Bread%3C/p%3E%3Cp%3EIn%20a%20stand%20mixer,%20with%20a%20dough%20hook,%20combine%20all%20of%20the%20ingredients%20and%20mix%20on%20medium-low%20speed%20until%20a%20ball%20forms%20and%20sides%20of%20the%20bowl%20are%20clean,%20about%203%20or%204%20minutes%20(this%20can%20be%20done%20by%20hand%20but%20will%20take%20longer).%3C/p%3E%3Cp%3EOil%20a%20large%20glass%20bowl,%20to%20prevent%20sticking,%20and%20put%20the%20dough%20ball%20inside.%3C/p%3E%3Cp%3ECover%20with%20plastic%20wrap%20and%20let%20sit%20on%20the%20counter%20until%20it%20has%20doubled%20in%20size.%20This%20could%20take%206%20to%208%20hours.%3C/p%3E%3Cp%3EPlace%20a%20dutch%20oven%20or%20bean%20pot%20that%20is%20oven%20safe%20into%20the%20oven%20and%20preheat%20to%20450'%20F.%3C/p%3E%3Cp%3EWhile%20your%20oven%20is%20preheating,%20remove%20the%20dough%20from%20the%20bowl,%20onto%20a%20well%20floured%20surface.%20Form%20into%20a%20ball.%3C/p%3E%3Cp%3ECover%20it%20with%20the%20bowl%20and%20let%20set%20for%2030%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20bowl%20(reshape%20into%20a%20ball%20if%20the%20dough%20has%20spread)%20and%20carefully%20place%20into%20your%20preheated%20dutch%20oven.%20Cover%20with%20a%20lid%20(or%20foil%20if%20you%20don't%20have%20an%20oven%20safe%20lid)%20and%20bake%20for%2030%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20lid%20and%20continue%20baking%20for%20an%20additional%2015%20minutes%20or%20until%20it's%20a%20nice%20deep%20brown.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20let%20the%20bread%20cool%20on%20a%20cooling%20rack%20before%20slicing.%3C/p%3E%3Cp%3ENow%20let%20me%20tell%20you%20about%20a%20little%20handy%20trick%20I've%20learned%20over%20the%20years.%20If%20you%20have%20an%20electric%20carving%20knife....they%20are%20perfect%20for%20slicing%20bread!%3C/p%3E%3Cp%3EThis%20will%20not%20be%20anything%20like%20your%20typical%20store-bought%20wheat%20bread.%20Not%20only%20will%20the%20flavor%20be%20so%20muc
