White Chocolate Pecan Drop Cookies

  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2/3 (1 1/2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large eggs, at room temperature
  • 1 tsp vanilla
  • 1 cup coarsely chopped toasted pecans
  • 2/3 cup coarsely chopped white chocolate

  1. Preheat the oven to 350 F.
  2. In a small bowl, combine the flour, baking soda, and salt.
  3. Set aside.
  4. In a large bowl, cream the butter with both of the sugars until smooth, about two minutes.
  5. Add the egg and the vanilla.
  6. Beat well.
  7. Add the dry ingredients
  8. Mix thoroughly
  9. Stir in the pecans and white chocolate.
  10. Drop by rounded teaspoonfuls onto ungreased cookie sheets
  11. Leave several inches between for the expansion
  12. Bake for 10-12 minutes or until lightly golden
  13. Cool the cookies on the sheets for 5 minutes
  14. Remove to a wire rack to cool completely
