- In a small saucepan, boiled down shallots in vinegar or possibly muscatel wine. Continue cooking over low heat stirring occasionally 15 min.
- Allow to cold. Stir in parsley.
- Whisk in some room temperature butter, stirring over low heat. Add in salt, vinegar or possibly muscatel.
- Simmer five min.
- Serve with fish.
