%20?%3C/p%3E%3Cp%3EFor%20their%20marinade,%20I%20used%20Jamie%20Oliver%E2%80%99s%20recipe%20for%205*%20pork%20ribs%20from%20the%20Jamie%E2%80%99s%20America%20cookery%20book,%20it%20had%20no%20less%20than%2021%20ingredients%20in,%20not%20including%20the%20separate%20spice%20rub%20and%20several%20processes%20but%20overall%20I%20found%20it%20manageable,%20a%20recipe%20for%20when%20you%20fancy%20an%20afternoon%20pottering%20in%20the%20kitchen!%20Also%20justification%20I%20believe%20at%20long%20last%20for%20having%20way%20too%20much%20in%20my%20store%20cupboard!%20The%20final%20result%20had%20lots%20of%20flavours%20going%20on%20with%20sweetness,%20spicyness%20and%20orangeyness%20all%20working%20in%20harmony%20together.%20I%20have%20not%20posted%20the%20recipe%20as%20its%20a%20bit%20long%20winded%20but%20will%20if%20anyone%20fancies%20a%20go!%3C/p%3E%3Cp%3EThe%20ribs%20only%20required%20half%20of%20the%20marinade,%20most%20of%20the%20remainder%20I%20used%20to%20cook%20some%20turkey%20breast%20in%20and%20the%20two%20went%20very%20well%20together.%3C/p%3E%3Cp%3ETo%20go%20with%20the%20ravishing%20ribs,%20I%20also%20made%20Jamie's%20Southern%20Pecan%20and%20Apple%20salad,%20which%20is%20a%20new%20favourite%20of%20mine,%20the%20orange%20mustard%20dressing%20sounded%20a%20little%20off%20putting%20as%20I%20am%20not%20a%20mustardy%20person%20(though%20I%20am%20slowly%20converting%20to%20the%20stuff..)%20but%20it%20went%20perfectly%20with%20the%20ribs%20and%20was%20not%20overpowering%20at%20all.%3C/p%3E%3Cp%3ESalad%20Ingredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E1.%20Jamie%20advises%20to%20oil%20a%20baking%20tray,%20I%20used%20baking%20parchment%20which%20worked%20perfectly.%20Gently%20heat%20a%20pan%20and%20add%20the%20butter%20and%20sugar.%20Leave%20on%20a%20gentle%20simmer%20for%20a%20couple%20of%20minutes,%20stirring%20occasionally%20to%20stop%20it%20catching,%20until%20the%20sugar%20has%20completely%20dissolved%20and%20the%20mixture%20starts%20to%20darken.%20Now%20gently%20stir%20in%20the%20pecans%20until%20they%20are%20all%20coated%20in%20the%20caramel.%20Tip%20the%20nuts%20on%20to%20the%20oiled%20(or%20lined!)%20tray%20and%20separate%20them%20out%20into%20one%20layer.%20Allow%20them%20to%20cool%20until%20the%20caramel%20has%20hardened.%20Don't%20be%20tempted%20to%20taste%20the%20caramel%20at%20any%20point%20as%20it%20will%20be%20very%20hot!%3C/p%3E%3Cp%3E2.%20For%20the%20dressing%20put%20the%20orange%20zest%20and%20juice,%20Dijon%20mustard%20and%20white%20wine%20vinegar%20into%20a%20large%20salad%20bowl%20and%20add%20a%20good%20lug%20of%20extra%20virgin%20olive%20oil.%20(I%20used%20a%20jam%20jar)%20Whisk%20together%20and%20have%20a%20taste%20-%20you%20want%20to%20get%20a%20nice%20balance%20between%20the%20sharpness%20of%20the%20vinegar%20and%20the%20smoothness%20of%20the%20oil,%20so%20add%20a%20little%20more%20oil%20if%20needed,%20then%20season%20carefully%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3E3.%20Core,%20quarter%20and%20finely%20slice%20your%20apples%20and%20add%20to%20the%20bowl%20with%20all%20your%20leaves.%20Break%20the%20cooled%20pecans%20apart,%20add%20half%20of%20them%20to%20the%20bowl,%20and%20use%20your%20hands%20to%20delicately%20toss%20and%20dress%20everything.%3C/p%3E%3Cp%3E3.%20Serve%20on%20one%20big%20platter,%20or%20divide%20up%20between%20plates,%20and%20finish%20by%20crumbling%20over%20the%20rest%20of%20your%20beautiful%20caramel%20pecans.%3C/p%3E%3Cp%3EServe%20immediately%20-%20I%20made%20sure%20everything%20else%20was%20ready%20before%20adding%20the%20dressing.%3C/p%3E){kind=link}
