%3C/p%3E%3Cp%3ENow%20it%20was%20time%20to%20brown%20the%20ground%20beef.%20I%20cooked%20it%20with%20a%20little%20pink%20salt,%20pepper,%20oregano,%20garlic%20powder,%20onion%20powder%20and%20marjorum.%20Once%20it%20was%20finished,%20I%20put%20the%20beef%20into%20a%20bowl%20and%20set%20it%20aside.%20In%20the%20same%20pan%20(to%20get%20the%20flavor%20of%20the%20spices%20I%20had%20used)%20I%20threw%20in%20some%20minced%20garlic.%3C/p%3E%3Cp%3EWhile%20the%20garlic%20was%20sauteeing,%20I%20took%20out%20some%20frozen%20spinach%20I%20had%20and%20cooked%20this%20according%20to%20package%20directions,%20and%20also%20by%20adding%20a%20little%20sea%20salt%20and%20lemon%20slices.%20By%20the%20time%20the%20spinach%20had%20finished%20cooking,%20so%20had%20the%20barley.%20I%20removed%20what%20was%20left%20of%20the%20lemon%20slices%20and%20poured%20the%20pot%20of%20cooked%20spinach%20into%20the%20pot%20of%20barley.%20I%20drizzled%20some%20olive%20oil%20in%20and%20then%20stirred%20it%20altogether.%20I%20let%20it%20sit%20over%20low%20heat.%3C/p%3E%3Cp%3EBack%20to%20the%20garlic.%20Once%20the%20garlic%20had%20started%20browning,%20I%20added%20one%20tablespoon%20of%20butter.%20As%20that%20finished%20melting/sauteeing%20with%20the%20garlic,%20I%20added%20in%202%20cans%20of%20creamed%20corn.%20I%20stirred%20this%20altogether%20and%20let%20it%20sit%20over%20medium%20heat.%3C/p%3E%3Cp%3EPhoto%20taken%20by%20Kyleigh.%3C/p%3E%3Cp%3EBy%20now%20the%20sweet%20potatoes%20were%20as%20soft%20as%20they%20needed%20to%20be%20for%20mashing.%20I%20put%20them%20into%20the%20bowl%20of%20my%20stand%20mixer,%20added%20in%20a%20couple%20tablespoons%20of%20butter%20(c'mon,%20what%20are%20sweet%20potatoes%20without%20butter???)%20and%20some%20ground%20nutmeg%20and%20then%20turned%20the%20mixer%20onto%20low.%20I%20just%20let%20it%20go%20and%20it%20worked%20like%20a%20charm!%20Perfectly%20mashed%20sweet%20potatoes!%20Woohoo!%3C/p%3E%3Cp%3EPhoto%20taken%20by%20Kyleigh.%20%20%20%20While%20my%20potatoes%20were%20getting%20mashed,%20I%20added%20the%20browned%20ground%20beef%20into%20the%20pan%20of%20creamed%20corn--which%20had%20started%20simmering.%20I%20let%20that%20come%20back%20to%20simmering%20so%20that%20the%20beef%20would%20absorb%20some%20of%20the%20moisture%20and%20tastiness%20of%20the%20cream%20corn.%3C/p%3E%3Cp%3EMy%20oldest%20came%20wandering%20into%20the%20kitchen%20and%20asked%20what%20I%20had%20decided%20on%20for%20dinner.%20See,%20we%20had%20a%20discussion%20earlier%20in%20the%20day%20about%20what%20to%20have,%20but%20we%20just%20never%20settled%20on%20anything.%20Anyway,%20so%20I%20told%20her%20I%20didn't%20know.%20This%20confused%20her%20as%20I%20obviously%20had%20food%20cooking.%20So,%20taking%20a%20chance%20on%20being%20straight%20with%20her,%20I%20told%20her%20exactly%20what%20I%20had%20cooking.%20I%20also%20explained%20that%20I%20wasn't%20sure%20just%20how%20it%20was%20all%20going%20to%20come%20together.%20These%20explanations%20made%20perfect%20sense%20to%20her.%20:)%3C/p%3E%3Cp%3EPhoto%20taken%20by%20Kyleigh.%20%20%20%20It%20was%20about%20this%20time%20I%20decided%20to%20give%20the%20spinach%20barley%20a%20try.%20(I%20still%20can't%20believe%20I%20added%20spinach%20to%20my%20food%20of%20my%20own%20accord--and%20actually%20wanted%20to%20eat%20it!!!)%20By%20now%20both%20girls%20were%20in%20the%20kitchen%20and%20since%20I%20was%20trying%20something,%20they%20wanted%20to%20as%20well.%20They.%20Liked.%20It.%20I%20worked%20very%20hard%20to%20keep%20my%20jaw%20from%20dropping%20to%20the%20floor.%20Normally,%20these%20girls%20don't%20like%20anything%20green.%20What%20was%20happening!%20haha%3C/p%3E%3Cp%3EI%20had%20decided,%20just%20before%20plating,%20to%20add%20some%20ricotta%20cheese%20to%20the%20spinach%20barley.%20I%20stirred%20that%20in%20and%20it%20was%20awesome!%3C/p%3E%3Cp%3EAnd%20just%20like%20that,%20I%20had%20dinner!%20My%20inspiration%20for%20this%20was%20Shepherd's%20Pie,%20which%20I%20had%20wanted%20to%20make%20but%20with%20a%20spin%20on%20it.%20First%20onto%20the%20plate%20was%20the%20spinach%20barley.%20Then%20the%20mashed%20sweet%20potatoes%20went%20on%20top%20of%20that.%20The%20final%20finish%20for%20the%20plate%20was%20the%20ground%20beef%20and%20creamed%20corn%20mixture%20overtop%20it%20all.%3C/p%3E%3Cp%3EMaking%20sure%20to%20get%20a%20little%20of%20everything%20in%20my%20bite,%20I%20tried%20it.%20I%20admit,%20I%20was%20a%20little%20hesitant%20at%20first%20because%20I%20didn't%20know%20where%20I%20was%20headed%20with%20all%20this.%20It%20turned%20out%20absolutely%20%20delish!!%20I%20definitely%20recommend%20giving%20it%20a%20go!%3C/p%3E){kind=link}
