,%20my%20husband,%20our%203%20year%20old%20daughter%20Grace,%20and%20our%20spoiled%20dog%20Remmy.%20After%20becoming%20a%20single-income%20family,%20we've%20had%20to%20alter%20our%20spending%20habits.%20%20While%20I'm%20not%20an%20extreme%20coupon-er,%20we%20do%20shop%20sales,%20enjoy%20low-cost%20(or%20even%20free)%20family%20activities,%20and%20prepare%20frugal%20and%20healthy%20meals%20through%20out%20the%20week.%20%20I%20also%20enjoy%20sharing%20recipes,%20tips,%20family%20stories,%20and%20even%20my%20weight%20loss%20struggles%20on%20my%20blog,%20Under%20the%20Big%20Oak%20Tree!%3C/p%3E%3Cp%3ESince%20the%20birth%20of%20our%20daughter,%20we%20rarely%20go%20out%20to%20eat.%20%20It's%20just%20easier,%20cheaper,%20and%20most%20times,%20healthier%20to%20eat%20at%20home.%20%20But,%20that%20can%20start%20to%20get%20a%20bit%20boring%20if%20I'm%20not%20careful.%20%20So,%20I%20like%20to%20try%20new%20recipes%20here%20and%20there%20to%20help%20switch%20things%20up%20a%20bit.%20%20I%20don't%20get%20too%20fancy%20though,%20since%20I%20don't%20want%20the%20meal%20to%20get%20too%20pricey.%3C/p%3E%3Cp%3EI%20like%20to%20use%20a%20lot%20of%20fresh%20vegetables%20when%20I%20cook%20and%20try%20to%20use%20ingredients%20that%20are%20currently%20in-season,%20this%20helps%20keep%20our%20grocery%20bill%20low.%3C/p%3E%3Cp%3EToday,%20I%20want%20to%20share%20with%20you%20one%20of%20my%20favorite%20vegetable%20dishes.%20%20It's%20relatively%20new%20to%20our%20family,%20but%20was%20a%20hit%20right%20away%20(with%20the%20adults%20anyway)!%20%20In%20fact,%20I'm%20planning%20on%20preparing%20it%20again%20this%20weekend!%20%20The%20recipe%20below%20is%20for%20a%20large%20single%20portion%20or%202%20smaller%20portions%20and%20can%20be%20served%20over%20rice%20or%20noodles%20or%20even%20on%20it's%20own!%3C/p%3E%3Cp%3EVegetable%20Stir%20Fry%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3E1Tbs.%20Olive%20Oil%3C/p%3E%3Cp%3E1/4%20head%20cabbage,%20sliced%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EIn%20a%20hot%20pan%20or%20wok,%20heat%20oil.%3C/p%3E%3Cp%3EAdd%20cabbage,%20carrots%20and%20onion.%3C/p%3E%3Cp%3ECook%20until%20vegetables%20are%20tender,%20stirring%20often.%3C/p%3E%3Cp%3EStir%20in%20a%20few%20shakes%20of%20crushed%20red%20pepper%20flakes.%20%20(more%20or%20less%20depending%20on%20if%20you%20like%20some%20heat%20added%20to%20your%20stir%20fry)%3C/p%3E%3Cp%3EWhen%20vegetables%20are%20just%20about%20tender,%20add%20stir%20fry%20sauce.%20Stir%20to%20combine.%3C/p%3E%3Cp%3EAdd%20broccoli%20and%20water,%20stirring%20to%20scrape%20browned%20bits%20from%20bottom/sides%20of%20wok.%3C/p%3E%3Cp%3ECook%20until%20broccoli%20is%20heated%20through.%3C/p%3E%3Cp%3EServe%20over%20cooked%20rice%20or%20noodles%20for%20a%20heartier%20meal,%20or%20serve%20alone%20as%20a%20low-calorie%20meal.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3ESince%20I'm%20counting%20calories,%20I%20weighed%20the%20broccoli%20before%20adding%20it%20to%20my%20stir%20fry.%20%20The%20bag%20stated%20that%20one%20serving%20of%20broccoli%20was%204%20florets%20(85%20grams)%20but%20the%20size%20of%20the%20florets%20in%20the%20bag%20varied,%20so%20I%20weighed%20it%20to%20be%20more%20accurate.%20%20If%20you're%20not%20counting%20calories,%20just%20add%20as%20much%20as%20you%20want.%3C/p%3E%3Cp%3EThe%20first%20time%20I%20made%20this,%20I%20ate%20the%20entire%20pan%20full%20as%20a%20single%20serving!%20%20I%20was%20really%20hungry!!!%20%20This%20works%20well%20as%202%20smaller%20portions,%20especially%20if%20serving%20over%20rice%20or%20noodles.%3C/p%3E%3Cp%3EI%20liked%20keeping%20the%20cabbage%20in%20longer%20slices%20rather%20than%20chopping.%20%20Since%20I%20wasn't%20planning%20on%20serving%20over%20rice%20or%20noodles,%20the%20slices%20of%20cabbage%20made%20me%20feel%20like%20I%20was%20eating%20noodles.%3C/p%3E%3Cp%3EWhen%20I%20made%20this%20a%20second%20time,%20I%20added%20some%20peas%20that%20were%20leftover%20from%20a%20previous%20meal.%20%20About%20a%201/4%20cup%20(34%20additional%20calories).%20%20Yum!%3C/p%3E%3Cp%3EBe%20sure%20to%20add%20calories%20if%20serving%20over%20rice%20or%20noodles%20or%20adding%20additional%20vegetables.%3C/p%3E%3Cp%3EIf%20you%20don't%20think%20an%20all-vegetable%20dinner%20would%20go%20over%20well%20with%20you%20or%20your%20family,%20check%20out%20my%20recipe%20for%20Cabbage%20Chicken%20Stir%20Fry.%3C/p%3E%3Cp%3ETotal%20calories:%20%20326*%3C/p%3E%3Cp%3ECalories%20if%20divided%20into%202%20servings:%20%20163*%3C/p%3E%3Cp%3EThere%20you%20go!%20%20A%20healthy,%20low-calorie%20and%20low-cost%20meal%20that%20is%20quick%20and%20easy,%20too!%20%20I%20hope%20you'll%20try%20it%20and%20enjoy%20it%20as%20much%20as%20we%20do!%20%20I%20also%20hope%20you'll%20stop%20by%20and%20visit%20me%20over%20at%20Under%20the%20Big%20Oak%20Tree!%3C/p%3E%3Cp%3EPin%20It%3C/p%3E){kind=link}
