It is easy, just put it in your pasta!

While we were visiting my parents in Virginia, I finally got to go into a Trader Joe's. We are not fortunate enough yet to have any in Florida, but I always hear so much about them from my mom and some of my friends. I must admit, I was not disappointed. The store by my parents, is small, but it is packed full of wonderful things. I especially enjoyed their cheese and wine sections! My mom picked up a package of their Lemon Pepper Pappardelle to serve with Lemon Shrimp for dinner that evening. I must admit, I love lemon, but thought it would just be too much lemon for one meal, Lemon Shrimp over Lemon Pasta. Boy was I wrong, the pasta has just a hint of lemon and was a wonderful compliment for the shrimp.

Now the problem was we flew to VA and of course would be flying home. How was I going to get all the treasures I found at Trader Joe's home.?The answer, I wasn't, especially since I had all ready done my fair share of shopping...... bummer.

Yesterday, I realized I had purchased way too many lemons and I had 2 huge ones on my tree that would be ready for picking soon. I thought about making a Lemon Meringue Pie, but still had a couple pieces of the apple pie I made the night before. I decided to make Chicken Picatta. Then I thought how wonderful it would be served over lemon pasta. Oh well, guess I would just have make my own since we don't have a Trader Joe's in the area! If you have read any of my previous blog (which I hope you have) you already know how much fun I have with my Kitchenaid Pasta Maker! I used the basic egg noodle recipe, substituted fresh lemon juice for the water and added some lemon zest. It was really so easy! I used my fettuccine cutter and while the pasta was drying, whipped up my oh-so-easy and very yummy chicken. Dinner was ready in less than 30 minutes!

Season chicken with salt and pepper. Place about 1 cup or so of flour in a plastic baggie. Put in 2 or 3 chicken breasts, seal the bag, and give it a good shake. Remove to a tray and repeat with remaining chicken.

In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and noodles, garnish with parsley.
