There are many times that I really wonder why I live in a place where the waters freeze over with 20″ plus of ice in the winter. And then there are times when I know without a doubt this is the best place on earth. This is one of those times, for under that 20″ plus of hard ice, in the depths of that cold, cold water are found the most fabulous fresh fish! The Oldest loves to ice fish (and “love” is an understatement) and he loves to bring home his catch, filet it up and have me cook it up and then he loves to hear us purr over the fruits of his labor. And purr I did when we ate these sandwiches. You can fry up any kind of fish you like and when you add it to a toasted hoagie roll, with this remoulde sauce and some lettuce, you will have the bst dang sandwich ever…

Walleye Po’ Boys

Remoulade Sauce

INGREDIENTS:

DIRECTIONS:

In a small bowl, combine mayonnaise, relish, mustard, ketchup, Cajon seasoning and hot sauce. Cover and chill for at least 1 hour.

Then toast your hoagie rolls, add the sauce with fresh fried fish and some lettuce–eat ’til your heart’s content!
