Ингредиенты

  • 3 egg yolks
  • 5 ounce (200 g) Mascarpone
  • 15 champagne biscuits or possibly spoon cookies
  • 10 amaretto cherries
  • ½ glass Amaretto or possibly Marsala
  • 10 fl ounce (30 cl) coffee
  • Custard
  • Cocoa pwdr
  • 3 tbsp icing sugar
  • 1 tsp instant coffee
  • 1 tsp orange zest (from an organic orange)

  1. Place the 3 egg yolks in a large bowl
  2. Beat Large eggs to a creamy consistency
  3. Whiten the Large eggs with the sugar, which is, slowly add in sugar while beating to obtain
  4. a lump-free consistency
  5. Add in instant coffee, Mascarpone, orange zest and continue to mix The
  6. consistency should be creamy and light
  7. Pour coffee and amaretto into a plate
  8. Dip halved champagne biscuits in the coffee-amaretto mix Let biscuits soak
  9. in some of the mix without letting them disintegrate
  10. Line the bottom of a bowl with champagne biscuits
  11. Spread a layer of the Mascarpone mix, ideally with a pastry bag
  12. Repeat till bowl is filled, making sure to finish with a layer of mascarpone mix
  13. Chill bowl for 6 hrs
  14. Cover the bottom of a plate with custard
  15. Delicately unmould bowl onto plate
  16. Sprinkle cocoa over all
  17. Decorate with a few amaretto cherries
