The inception of Veggies Made Easy is to help ease the problems many of us face when it comes to veggies and our kids. I think many of us know to turn a simple veggie in probably 7-8 various exotic dishes when a guest arrive.
An Okra (ladies finger, Bhindi) for example takes the form of stuffed okra, yogurt okra, crispy fried, cashew paste okra and so on. But when it comes to daily cooking its the same old plain, quick and time tested okra recipes for me.
In Veggies made easy series I try to bring forth the simple ways to enjoy the vegetables in its natural form. Apart from various cooked recipes, you can find salads, raitas and smoothies made with veggies.
Blushing Smoothie
The first in the smoothies series is this lovely and blushing smoothie. Easy and quick to prepare it is a beautiful blend of beet, cucumber and carrots.
Its a good idea to get a juicer as a life long investment on health. Mine is the good old loyal juicer which is with me for the last 12 years and going sturdy still You can find many hi-tech juicers available in the market with more efficiency and less of mess.
Ingredients;
(makes one serving)
- 1 small Beetroot
- 1 small cucumber
- 1 carrot
- 2 Tomatoes
- 1/2 an Apple
Method: Wash and cut all the vegetables in small pieces. Blend all in a juicer with or without ice cubes. A blushing smoothies is ready for a healthy start of your day.
Note:
Apple in the above smoothies gives a sweet and lovely flavor to the otherwise bland smoothie.
Sprinkle roasted and ground cumin powder and a pinch of salt if you wish.
It is best advised to drink it without any spices.
Do not store the smoothie for long as the nutrition in the veggies diminish with time and due to oxidation.
Dilute the smoothie with little water for better digestion.
Smoothie Sorbet
An interesting and creative option will be to add 2 tsp. of sugar in the blushing smoothie and freeze it to make a sorbet or ice candy. Use different moulds to set the sorbet.
A fun way to add veggies to your kids diet.
A glass of vegetable smoothie in the morning will go a long way to healthy living.
