Veggies Made Easy – Ridge Gourd

Ridge Gourd

Ridge Gourd is a beautiful climber which can adapt to any climate. A couple of these pretty climbers are growing majestically in the backyard of my house and they have reached the terrace of my house. The vegetable also called Taroi or Turai in Hindi, is a delight to watch on these pretty climber. I love to cook it often as it takes hardly 5-6 minutes to cook and is healthy too.

Simple to make with just a few spices this addition in Veggies made easy series is a good lunchbox option when served with chapattis. Normally people who want to avoid onion and garlic during festival seasons make this recipe in Rajasthan.

Ingredients;

(makes for 2 persons)

1 large Ridge gourd

Method: Peel the Ridge gourd and keep the peels separate, as I am posting a recipe for these peels also. Heat oil in a skillet and crackle the mustard seeds. Add all the dry spices and stir fry for a second. Add the chopped ridge guard and cook for 5-6 minutes. And you are done.

Garnish with fresh coriander leaves. Serve this simple and delicious Ridge Gourd curry with hot whole wheat chapattis or as an accompaniment to rice.

Note;

Select Ridge gourd with soft ridges which are tender to touch. Mature ones will not taste good and have lot of hard fibers in it.

Ridge gourd leaves lot of water when cooked, which makes the recipe a bit watery. Cook for another 4-5 minutes on high flame if you want to avoid water in the recipe.

There are a lot of variations with ridge guard some makes exotic dishes while other are a good lunchbox options. Shall come out with all soon.

Quick cooking and less spices makes this recipe quite healthy and nutritious.

Vegetables cooked with very few spices and condiments will retain the original flavors and nutrition in the recipe. Avoid over cooking and reap the goodness of vegetables.
