These veggie haggis and onion chutney toasties are my second recipe for Burns Night this year. They aren't part of a traditional Burns Supper, but would make a really satisfying lunch or a more casual dinner with some salad and crisps on the side.

There's just something so comforting about a toastie. I don't know why that is, but I would never say no to one.

This toastie is a layered masterpiece. It starts with a thick layer or cream cheese on thick wholemeal bread, next comes a layer or spinach leaves. On top of that there is a generous layer of warm spicy vegetarian haggis and it's finished off with the other slice of bread slathered thickly with sweet onion chutney and grilled until crisp, with those lovely charred grill lines. Mmmmmmm!

What is veggie haggis?

I realise many of you may not have tried or heard of veggie haggis before. It's a traditional Scottish dish a bit like a savoury mince that is usually served with neeps (mashed turnip/swede) and tatties (mashed potatoes), but it makes a great ingredient for so many dishes.

Vegetarian haggis is a mixture of pulses, root vegetables, mushrooms, oats, seeds and spices. It's utterly heavenly.

What can I make with vegetarian haggis?

There are so many options. You could use it as a baked potato filling, sprinkle it on a pizza, make pasties or fill puff pastry parcels with veggie haggis and vegetables. You can roll it in balls and fry them in a beer batter, make a shepherds pie with it or veggie scotch eggs. You can even make it into a nut loaf with the addition of red lentils. Oh and I mustn't forget burgers. Veggie haggis, neeps and tatties make the most heavenly quick burgers.

McIntosh of Strathmore

We first came across McIntosh years ago. We loved their macaroni cheese, which is a big favourite here in Scotland and were delighted when they brought out a vegetarian version of their haggis, neeps and tatties. I'm hoping they will get around to making a veggie version of their stovies too.

If you love mac and cheese you might want to try their macaroni cheese with spicy mexicana or their macaroni cheese with smoky applewood. If that's not enough macaroni for you, they even make macaroni pies. It's Cooper's macaroni of choice. No other will do.

Robert Burns Address to a Haggis

Our national poet Robert Burns even wrote a poem to a Haggis in 1786, which is still read out on Burns Night (an evening of celebration in Scotland to celebrate Robert Burns birthday on the 25 January each year) when the haggis is piped into the room, before it's cut into and served. Here is the first verse.

Fair fa' your honest, sonsie face,

Great Chieftain o’ the Puddin-race!

Painch, tripe, or thairm:

Aboon them a' ye tak your place,

Weel are ye wordy of a grace As lang 's my arm.

Heat your sandwich grill.

Remove the haggis from it's wrapper and warm in the microwave for 1 minute or just a little longer depending on your microwave power.

Spread two slices of bread with the cream cheese, top with spinach, and a generous layer of warm veggie haggis.

Spread the last two slices of bread with the chutney and top off your sandwiches.

Grill until hot, crisp and golden.

Serve with salad.
