Vegetarian Chinese Fried Rice Recipe
A delicious and tasty vegetarian version of Chinese Fried Rice. Kids would love this and makes a great school lunch or after school dish.
Ingredients:
- Rice – 1 cup, cooked
- Carrot – 1, sliced
- Onion – 1, sliced
- Capsicum – 1, sliced
- Beans – 10 to 12, chopped
- Cabbage – 1/4 cup, chopped
- Ginger – 1 inch piece, peeled
- Garlic – 6 cloves, peeled, finely chopped
- Green Chillies – 4, slit
- Tomato Sauce – 1 tsp
- Vinegar – 1/2 tsp
- Spring Onions – little, chopped
- Salt as per taste
- Oil as required
Method:
1. Heat oil in a pan.
2. Saute the onions for a minute.
3. Add all the vegetables, ginger, garlic and green chillies.
4. Stir well and cook for two minutes.
5. Add tomato sauce, vinegar and salt.
6. Stir well.
7. When the vegetables are cooked and tender, add the rice.
8. Mix well.
9. Garnish with spring onions.
10. Serve.
