- In a steam kettle, heat the oil, saute all vegetable except zucchini, potatoes, and green peas.
- Add paprika to the sauteed vegetables and cook for an additional 5 minutes.
- Add beef stock, bring to a first boil, reduce to a simmer, and skim as needed.
- Simmer for 1/2 hour, then add potatoes. Continue to simmer for another 30 minutes.
- Add diced zucchini and green peas, and simmer an additional 5 minutes.
- Adjust the seasonings and serve.
