Let me start by saying that I am not vegan or vegetarian. I eat meat, but not near as much as I used to.    I frequently  look for ways cut back on meat, and when  I find something that works, I’m all over it.  French onion soup is typically made with beef broth and I’ve been wondering  if there was a way to transform a vegetable based soup with a robust meaty  both into a meatless version.   So I decided to do a little experimenting. . .  with  Kikkoman Traditionally Brewed Less Sodium Soy sauce. I sometimes  use Kikkoman Traditionally Brewed Low Sodium Soy sauce to add a  umami flavor  to dishes that aren’t  Asian inspired.  Just a tablespoon or two of Kikkoman Traditionally Brewed Less Sodium Soy Sauce can  really round out the flavors  for a savory tasting soup, stew or casserole.   Even though soy sauce has gotten a bad rap for being high in sodium, a little bit goes a long way which often results in lower sodium content.   The amount of sodium  in this soup is half  of what it  would be if I had used beef broth. This soup is incredibly easy to make with only a few simple ingredients.   And the best part – my family could not tell the difference between the traditional onion soup and the vegan  version.  It tastes  great as is or if you are a vegetarian cheese lover,  top with a slice of cheese and melt it for a satisfying bowl of French onion soup.
