It's that time of year again folks... the time of year where coffee stands on every corner pull out their awesome statement signs brandishing the notice 'WE HAVE EGGNOG!!' Hooray! Ok. I know, some of you have a strong strong aversion to egg nog. It's a love hate thing.

Now, if you live in the northwest you know that coffee stands are definitely not lacking. And by not lacking I mean there is one every 200 feet or so. If there isn't a Starbucks nearby, there's a Seattle's Best or Tully's. Or, even better than the big dogs, local Bellingham stops like Cool Beans, Bigfoot, one of my favorites: Stop n' Go Espresso and my alltime favorite, the Supreme Bean. Because it's supreme. It really is.

And the list doesn't stop there kids... this place is laden, and I mean LADEN with coffee stands. It's a virtual 'candy store' of coffee stands. It is a true anomaly. Something that you must see with your own eyes. I don't know how 'you other' people do it. You people that live places where there aren't nineteen coffee stands in one little block. How do you do it?

Anyway, this post isn't about coffee. It's about egg nog. Egg nog that I happen to lurve the idea of but of course don't drink because of the whole 'egg' part of the nog. When I go to these coffee stands I desperately want to order a egg nog latte. But I don't. The thought has also crossed my mind to bring my own cup of Silk 'nog' to the coffee stand and ask them to use it in my coffee. Then I think 'that's dumb, I could just make coffee at home and call it good.' And so I do.

But we go through the silk nog so fast, because it's delicious; so I did what I always do and I said to myself, 'self? why don't you make your own?' O.K. and then I went to my good friend google and I found this recipe on Vegetarian About Dot Com... thank you! Ok... I changed it a little. Duh. But thank you anyway. So good. Now, go make your nog. Off you go.

Need:

Combine half of the milk along with the instant pudding mix and whisk until thickened.

Add the rest of the soy milk and creamer and mix well.

Add vanilla extract, salt, nutmeg and cinnamon and continue to mix until combined.

Chill overnnight.

Serve:

Well, now if you want to have 'wicked' nog, you will want to start off with some rum. Captain Morgan, Admiral Nelson, it doesn't matter. Give your glass a double shot.

(yeah, and p.s. I'm a terrible bartender so all my drinks are way too strong. Terrible? Or Fabulous??)

In a small pot, heat up your delicious nog, or not. Heating is optional.

Pour nog over rum and garnish with a little nutmeg.

Serve and enjoy. Repeat.
