It is pretty unfortunate how labels can change your opinion of things. Blame it on gut reactions, snap judgments.
For instance, if you make this snack, put it up in your break room at work, with a cute little post-it note that says “Chocolate Brownie Batter Balls” I assure you they’ll be snatched up before the 2nd pot of coffee is made.
If, however, you choose to label them as “Gluten-free, dairy-free, sugar-free, vegan date-nut truffles” they’ll be largely ignored.
How can something so “free” of everything we love (carbs! sugar! fat!), be worth the calories?
In truth, these unassuming “healthy” treats were better than any refined and processed sweet I received on the oodles of Christmas goodies trays delivered to work. They are irresistible. Truly. And if the healthy label scares you, just call them Brownie Batter Bites.
- Vegan Date Nut Truffles
- 200 grams dates
- 200 grams walnuts
- cocoa powder, for rolling
1. Place dates in a bowl of warm water for about 30 minutes to soften. In a food processor, pulse walnuts until ground to a coarse consistency. Drain dates but do not pat dry.
2. Add to food processor with nuts and pulse to combine. Process until the mixture is a doughy consistency. With clean hands, roll into small balls and then roll in cocoa powder.
3. Refrigerate for about 20 minutes then enjoy! Store leftover balls in a sealed container in the refrigerator.
